Everything is made from scratch by José, which means each tortilla is crafted with care and technique. I stopped by Taco & Burro Maya for lunch one afternoon, as the relaxed, no-frills atmosphere is exactly what I wanted to enjoy a solo dining experience. The restaurant design is vibrant and colorful, and the laid-back minimalist approach allows diners to focus on the food and flavors. The restaurant has an open terrace with cool metal bistro tables, and an interior dining area features rectangular tables and bench seating. I started with crispy artisan tortilla chips topped with freshly made guacamole. The cool, creamy guacamole was perfectly seasoned with red onion and cilantro. I accompanied it with a glass of Michelada, a traditional Mexican drink made with beer, lime juice, and peppers. I love the way the salt on the rim brings out the spices in the drink. Cool and refreshing, the drink was delicious. Taco & Burro Maya has so many delicious tacos, that it's hard to choose. I settled on Chicken Tinga taco, with tender chicken breast in chipotle sauce, wrapped in a soft shell, along with Cochinita Maya taco, the same soft shell filled with juicy leg of pork macerated in achiote sauce with purple onion. I didn't expect to enjoy such delicious Mexican cuisine in Madrid, but thankfully José has brought Mexico City to Spain. Taco & Burro Maya is excellent all around, from the casual environment in the old brick building on Paseo de Santa Maria de la Cabeza to the great service. I can't wait to go back.

    Tacos Chapultepec is my go-to spot for mole tacos-- I could order 10 and still want more. Besides…read moremole, they have plenty of types to choose from: carnitas, pastor, cochinita pibil, suadero, even nopal (cactus), and more. The tacos cost from 1,50-2€, so it's a super affordable spot. It gets very busy, but if you arrive close to opening time (20:00) you should be able to easily snag a spot upstairs. Another great thing is the location-- Cardenal Cisneros is packed with great restaurants and bars, and cheap tacos are always a good choice for pre-beer fuel or post-beer hangover-avoidance. The only reason I left off one star is that the tacos I've had in the afternoon are not nearly as good (or even close) as the ones at night. I don't know why, but it's a shame, because they have a great fixed price lunch that includes a lot. I was ready to sink my teeth into that delicious mole taco and ended up very disappointed. That visit was a few months ago, so hopefully it was an issue of the past!
