Caroline does a fine job with her chocolates, ranging from "standard" pralines to interesting selections (such as Mojito, Prune, Thyme and Verbena). Caroline was very kind and put up with my limited French, patiently describing the production process and their history. She introduced her daughter who works in the shop. I love supporting family businesses! I enjoyed my visit (and even went back but they were closed on Wednesday when I returned- sorry to miss you Caroline!). Note that they appear to be closed over the summer months. Be sure to see their web site for opening hours (http://www.chocolaterielencieux.fr/les-horaires/). I recommend a visit the next time you are in Gigondas or the Provence region of France.

The lady in the shop spoke English well enough to help us choose: a few dark pieces filled with ganache, a mint, a coffee creme filling, and one with gianduja. It's going to break my heart if these aren't available in the US. The owner says online that based on production times, each piece takes about 1 minute 20 seconds to create. And then you eat one in 20 seconds, while the flavors linger for a minute. And the memory of those flavors will linger even longer!!!
