I visited this lovely shop while on a Taste of Toulouse tour. This shop is really amazing for several reasons.
First, all chocolate is made on site, which is notable because the shop itself is not very large. The selection of chocolates and other sweets is quite astounding. There are chocolate covered fruits and nuts, truffles, pieces of chocolate that are akin to American style bark, and most importantly, their version of fudge.
The owner of the shop visited the United States and fell in love with American fudge. It is unusual for find that here in France and there are several types to choose from. I had the original, which is like dulce de lèche ish caramel but it is not made with condensed milk. I also had the pain d'épices, spice bread, which is like gingerbread.
Both are delicious but I had a special fondness for the pain d'épices. Admittedly, I began to cry after the firsT bite because it perfectly combined two desserts that my grandmother (herself a professional baker and candy maker) made for me as a child: penuche (if you are from New England, you will know what it is) and gingerbread (not a cookie but more like a loaf). It was a surprisingly and embarrassingly emotional experience. (Thankfully, no one noticed)
