We don't eat meat but on adventures such as this, we look forward to tasting what the local cuisine has to offer. We prefer seafood but there wasn't any on the menu. Our server, Alessandro, recommended the tripe which we readily accepted. All three dishes turned out to be excellent choices. The pasta were cooked to perfection - al dente. The arrabiata was perfectly spiced. The balance between the black olives and truffles in the spaghetti gave it an earthy aroma and teased our palates so that we could not stop eating the darned dish! The tripe? Heavenly! Reminded us of mom's callos except that this tripe had a melt-in-your mouth consistency. All the food we had were prepared Umbrian style and we thoroughly enjoyed every bite! Definitely recommend this place if you want a taste of the local cuisine.

It's possible you can sneak in and get a table towards the end of the night but don't count on it because you might not get lucky. We dined here twice during our week-long stay at the hotel. It's not a very fancy place but the food is just superb! I recommend the wild boar tagliatelle and the veal steak with balsamic and arugula. (High-quality beef is a local regional specialty. You won't believe how tender it is!)

We had the ravioli in pesto and gnocchi with a delicious red wine sauce, and some chicken skewers on a bed of greens. Everything was delicious. The prices were also very reasonable. The house red was a delicious Montefalco that was so easy to drink we got a second carafe. The staff were very nice, but the lost star is because the waitress could not remember which table had ordered which dish. Not which people at the table (that avoidable mistake happens all the time) but which party to deliver orders to.

The wild boar pasta was less exciting since the flavor was not quite as complex. The millefoglie dessert was super sweet with chantilly cream, chocolate syrup, and chocolate chips.
