Although most people associate the macaron with Paris, it was originally made in Saint-Emilion. According to local legend, the macaron was created by Carmelite nuns who wanted to use almond flour as the base because it was filling. Macarons here are slightly different because the recipe uses freshly ground almonds instead of the drier almond flour used in most macaron recipes. This recipe results in a denser macaron. The macarons we bought here were very expensive and quite stale. I understand that we arrived during the off-season and during a time when the country was still under a form of lockdown (people from outside of France could not travel here), so they may not have been as fresh. However, the price should have been accordingly adjusted for an item that was less than fresh, which is customarily done here.

It has the perfect crust, flavor, texture. When i told Veronique how i feel about this bread she explained about the baker and the oven. So of course i had to visit him and his incredible oven and bakery. The baker is extraordinarily friendly and explained to me how the oven works. It was used by his grandfather. So this extraordinary bread is made by an exceptionally wonderful baker in a particularly interesting and traditional oven in the countryside of a beautiful country. And this one little bakery is the one we keep returning to. The bread is simply divine, with the best texture and flavor, and made on site with organic and fresh ingredients. There are many varieties, wish we had time to try them all, and my favorite is one with chocolate. My only complain is that it's take out only. There is not even space where you can stand to eat, and they don't sell any coffee or drink. The counter is a mere foot or two from the door, enough space to place your order, and behind the counter you see the production facility, and that's all there is. Baking is all they do, all they focus on, and they sure do a mighty good job of it.
