Two of my favorite fillings included the Carrillera (pork cheeks braised in red wine) paired with patatas paja (potato sticks) and a spicy mojo picon sauce; and the Pollo tandoori (spiced chicken) paired with lettuce and mojo picon. To order, you simply list the number of the sandwiches you want on a sheet of paper and pay at the counter, and the sandwiches are served along with potato chips on a platter as soon as they're ready!
