My waiter was not only incredibly professional and knowledgeable, but was genuinely kind. I could really tell how much he cared about me and my experience and how passionate he was about the food he was serving. I had similar positive interactions with the rest of the staff as well. However I knew it would not be my only bouchon dinner after trying the typical dishes of eggs in red wine sauce and fish dumplings. I had never had these food before but I know how to cook so I knew something was off. The red wine sauce was thin and watery and the fish dumplings dense and pale.
