Turns out the anchovies were just anchovy paste, which lent a rich flavor to the dish. We both had pinci for our main courses, which is a thick roundish type of pasta, much shorter and thicker than spaghetti. The pinci itself was perfectly al dente. One of us had it with shrimp and the other with clams and bottarga, a chewy fishy pasty accompaniment made from fish roe which added complexity to the dish. Wonderful!
