Noticed that the gelato melted quicker than others I've had but was given a lesson from my kids on why. There is less air incorporated into the gelato and less milk fat is used which enhances the flavor as it melts. Very few gelato shops (less than 1% in the country) use A2 dairy and make their gelato from scratch. Those seeking artisanal, high quality gelato should give this lovely shop a try.
