Fleischerei Harms is a family-run business without a dozen branches or (often skin-deep) "lifestyle appeal", so one would expect them to be able to concentrate on getting their meat right. The top quality tenderloin and roastbeef (plus a very tasty sauce remoulade that puts many a delicatessen's offerings to shame) I bought there confirmed this notion.
