Many restaurants in France serve duck gizzard salad, but in Dordogne area is foie gras production region. There is a lot of geese. The geese gizzard is a lot softer compared to duck gizzard. My wife has the goose pate. Our entrees is beef kabob and duck leg. Both dishes is excellent. The France prepare kabab just lightly seasoning. You may want to add some salt.
