Aptly named since they raise their own pigs in a farm and they make sure they follow practices that are humane and sustainable. Feeding people with respect to the environment. They use the whole pig and nothing gets wasted. I made a dinner reservation a month in advance through their website. It was a simple process. I stopped by for lunch too and there was a line out the door for people without reservations. They do have a takeout window to the side of the restaurant if you want something like a sandwich. You can do their tasting menu or do a la carte. It'll end up cheaper if you did the tasting menu than a la carte. However, I have been eating my way around São Paulo and I knew I would be struggling to finish a lot of food plus, I had a 7am flight the next day. So, I ordered a la carte. I wanted the San Ze Pig (roast pig) but it's too much food. Torresmo de Pancetta + Goiabada + Picles de Cebola Roxa: Crispy pork cracklings topped with a thick sauce made with pickled red onions, and guava. You get 6 pieces. Definitely get this. It was crispy, salty and sweet. Sushi de Papada de Porco + Tucupi Negro + Ameixa fermentada: Pork sushi brushed with black tucupi (sauce made from fermented manioc which looks and tastes similar to balsamic vinegar) and fermented plum. It looks like unagi nigiri. You get 4 pieces per order. I was not given utensils. The items I ordered were meant to be eaten using your fingers. The interior and exterior seem very casual. There's graffiti outside the building and inside the restaurant. Even when you look in Google Maps, it doesn't look like it's a restaurant but an abandoned building. By the time I contemplated adding the San Ze Pig, I was already done with my meal and it was time for me to go back to the hotel. You can check out their menu on their website which you could translate to English to save time on making your selections. They also have menus in English if you ask for it. According to our waiter, the "must try" appetizer was the crispy pork belly topped with guava paste, but more than the taste of this item, I loved the presentation, as the six bite-sized pieces were plated on a pink plate topped with a pig head cover! The best way to get a good sampling of their offerings was the 8-course tasting menu, which featured numerous small bites, an entree, and two dessert courses. 1. Countryside Flavors - Pork shank terrine, pork tartare, pork with couscous, ora pro nobis (an edible leaf), and an earthy pork crackling bread with mortadella and brown butter. 2. Using Your Hands - Sweet potato steamed bun topped with Milanese pork, roasted pork empadinha with cream cheese and couscous farofa, pork in a can (shredded pork fritter), and a miso pork broth. 3. Raw Pork - Pork loin carpaccio with salad and a pork crackling. 4. Pork + Shrimp - Dumplings filled with cotechino and shrimp, all in a toasted vegetable broth. 5. Fond Memories - Pork rib, corn & cheese foam, and ground maize chips. 6. San Ze Pork - This entree course centered around two super tender pieces of fatty roasted pork, pork sausage, and a number of vegetable sides including couve, okra with peanuts, farofa, beans with eggs, and banana tartare. Definitely a highlight! 7. From the cow's udders - The only course with no pork, this dessert came with vanilla ice cream, rice pudding, yogurt, milk foam, crunchy peanuts, toffee caramel, and toasted breadcrumbs. 8. Sweets + Black Coffee - Mid roast black coffee from Minas Gerais, strawberry sorbet/jam in a cone, cured cheese with pumpkin jam, candied banana, milk caramel, and a chocolate-covered pork crackling. What a feast of the senses and a must-try restaurant for any foodie! My favorite courses included the pork crackling bread from Countryside Flavors, the pork empadinha from Using Your Hands, and every component of the main course, the San Ze Pork! The service was super friendly and explained everything we were tasting, and the menu came at a reasonable price for the high quality and creativity of the dishes!
