They gave me no notice, i was sacked one hour after closing. They forced an elderly women to work there without any heating during winter while she was sick. It was freezing. And i was cleaning all the time cause it's pretty dirty. So i do NOT recommand this place at all. They treat their employees pretty badly.

Even so, I do not want to miss the chance to rave about some of the items we picked up for our travel back to the UK. This place is around the corner from our hotel and we didn't go in until our last day, just before heading to the train station to begin our journey back. We grabbed a few items for the ride: a few delicious, flûte aux olives and mini gratiné feta olives. We also got our meaty friend one of these mini gratiné with some sausage in it. No idea if it was good, but ours were delicious. They were not even warmed up and were simply perfect. The staff was kind and helpful. I will be thinking about these for a long time to come and will 100% make a special trip to this place to try other items should I return to Brussels some day. My only regret is that we did not come in here sooner.

Somewhere in the middle of the pack as relates to variety, the choices on all sides not 'limited' but alo not as vast as Patisserie de Baere or Le Saint Aulaye, those arriving at La Fleur du Pain during early morning hours are likely to find breads and viennoiserie still warm from the oven and although Pastry selections apparently expand by midday, there are still several including some larger format options ready for take-away. On par for price to other local artisans, the seven items purchased just under €17, paying attention proves beneficial at La Fleur du Pain as there are not one, but two, styles of Almond Croissant offered, the single baked version wispy like a traditional Croissant aux Beurre while the other was sliced and filled with almond paste with a crown of even more sliced nuts toasted on with frangipane, both great with the choice as to which was better really a personal sort of thing. Showing a good degree of butter by way of the escargot coiled around melting bits of Dark Chocolate, La Fleur du Pain continues to shine when it comes to the use of Fresh Fruits over laminated all-butter pastry in any number of shapes, the Apricot version perhaps a bit soggy by way of cream while both Tarts were textbook with edges slightly charred. Known for their breads, a whole loaf wasteful for just one with a few smaller sizes available, it was on the recommendation of a middle-aged woman standing in line that a small "Triple Chocolate" roll was selected, the texture something like that of a rustic country loaf speckled with Dark and Milk Chocolate pieces while the crumb itself infused with infused with unsweetened cocoa allowing bitter notes to balance the sweetness.

Opening at 7h00, early by Belgian Standards but clearly welcomed by locals given the continuous flow of traffic throughout the earl day, Le Saint Aulaye is a sizable space compared to almost every other Bolangerie in the city surrounding and making the most of its footprint with a clean layout fully loaded with glass cases the biggest difficulty for patrons seems to be deciding where to begin and how to focus as temptation beckons no matter where one rests their gaze. Truly an impressive display, the craftsmanship and time invested in each creation easy to see, suffice it to say that "biting off more than one can chew" is likely for all but the most restrained, an order of nine items for just one person assuredly leaving leftovers, though not as much as many would think. Comparable to others in cost, the order just €27.10 all-inclusive, first tastes began with items still warm from the oven and although the Liege Waffle did not feature as much crystallized sugar as those made fresh elsewhere the laminated pastry showed evidence of great leavening, the Almond Croissant slightly compromised by a bit too much Frangipane filling while the Pain aux Raisin placed a picture perfect shatter atop curls of fruit and butter. Slightly overcooking the canele, interior sill smooth but just past custard, breads proved a strong point for the shop as both the Chocolate-studded Sourdough and Brioche Donut dazzled with their respective textures, the Baba au Rhum taking the route of customization by way of a pipette filled with liquor while the cake itself was a delicate sponge fully soaked in simple syrup. Ending with Choux, both selections taking a modern look at French classics, there is little doubt the chocolate dipped Profitteroles comprising a St. Honore warrant "must-order" accolades, the linear Brest a la Éclair equally noteworthy with the handmade hazelnut cream some of the lightest seen as of this writing.

The staff is super friendly, service is everything (it's like the Senteurs d'Ailleurs of bakeries ;-) ). One of the owners used to work at Harrod's so he knows what he's doing service-wise. Ok, it's a bit more expensive but you're paying for quality here. I also have the feeling that I eat less bread when I eat Saint-Aulaye bread in the morning because it's more filling. It's not like those cheap ass breads from the supermarket that become dough again when you take it between your fingers and you roll it a few times. They just moved to rue Vanderkindere. The shop is bigger (and so are the queues because the neighbourhood seems to love their newest addition). Although I HATE the 'No fruit' lamps they've put (too beginning 2000 and I've seen it already too much in instore interior design), the new pâtisserie really puts their creations in the spotlight. I cannot imagine you won't stop if you see those tasty 'gâteaux' or 'tartes' in the window.
