Baigorri's wine production process is very interesting. The winery itself is a 7 level glasshouse designed for a vertical production process. Here, almost each level is dedicated to one part of the process. For example, you first start at a higher level where the gathered grapes are being crushed, destemmed and collected in a steel container. After this steel container is filled with juice from the crushed grapes, it is attached to an apparatus that is being controlled, so that it can be moved directly above the top of a steel vat located on the level below. When the apparatus is aligned with the vat, grape juice and crushed grapes are dumped into the vat below where fermentation begins. You see all of this in real time of course, which makes the tour really cool. As you descend to each level below, the next step(s) of the production process continues: fermentation, barreling, then bottling. The concept of the 7 level glass house is to start at a high level and have gravity and machines do the work.
