We chose the little "Euphrasie" cottage in the back by the canal and enjoyed a roaring fireplace and cute little private patio right on the water. Totally immersive Bruges experience and just a few minutes walk to what you want to see. That cottage has sturdy but fairly steep steps inside, so maybe choose a standard room if that is an issue for you. This place has my highest recommendation.

You can also rent their bikes for €10/day. Breakfast was AMAZING. They have coffee, all kind of pastries, fruit, yogurt, eggs, cheese, bread, and will cook you fresh waffles or pancakes upon request. They always have a fire going in the fireplace which just adds to the whole experience. Rooms were excellent as well. Be prepared to climb lots of winding stairs, but I suppose that goes for most places in Europe. Highly recommend!!

Only inconvenient I noticed was that the bathroom was next door, but that was a minor one, as I was the only one using it. What did start to irritate me after a day was the impersonality of the interior: sitting room and living room (one large space) were painted grey, and apart from couches covered by white covers, a table and chairs, there was not a single personal touch. The same was true for the bedroom which gave a somewhat eerie feeling. Also the fact that the shower only had a button like the ones you find in public swimming pools added to this atmosphere.
