Cut to present day Im in Copenhagen at a butcher shop highly recommended by Yelper AJ who lived here for a while and shopped here for his meats. Medisterapolese, merguez, bresolinni, were some of the meats we had to munch on outside in the square after hitting the cheese shop and bakery, a few doors down. The workers wear old school uniforms and hats to impart a time long past. Super helpful, I got into a discussion about the Medisterapolese with one butcher and I knew this place was going to be awesome. Is it weird that I can carry on a long convo with a butcher about the charcuterie arts? As predicted, fabulous meat products and it's also good to know my own butcher makes a very comparable product.
