Re-review: I came to try this place again after a couple months. I visited the other local malatang resturant (YGF, tangbar, etc) and I think zhangliang has the best broth- the beef flavored, at least. And the fact that it opens late! It's funny how all the competitors started offering ice cream and oranges now. The restaurant could do a bit better with more attentive staff.

Great malatang! Ingredients are fresh and broth is tasty. I always get the spicy bone broth. Lots of Options for ingredients and sauce bar

I have some friends who come here weekly and I finally got to join them on one of their many malatang escapades. Food & drink: (4/5) This place way exceeded my expectations! I haven't found a malatang place in Washington that I particularly like, but this one has come really close. The ingredient selection isn't too bad but it could be better (wish they had bean curd). Price wise, it is MUCH cheaper than other places. My bowl ended up being $15 instead of my usual $20 even though I got way more. The tom yum broth was pretty decent with a nice tang- I would definitely get it again. My real highlight was the sauce bar tho. They had so many more sauce ingredients that most places don't have like Thai chili, which I greatly appreciated as a spice fiend. Didn't get any dessert other than ice cream, which was the typical nondairy, sort of icy kind of vibe. Plus side is that it's unlimited. Service: (4/5) This is the kind of place I would go if I didn't want to be bothered at all. Very brief interactions limited to the front counter when you pay. As an introvert, it was right up my alley.

Though this is only my second time getting malatang, I was very impressed by this branch! Zhangliang has a large variety of toppings to choose from, and I love how accessible their sauce bar and free appetizers/soft serve were! The food also looked fairly fresh, and the soup is rich and tasty. However, it was a little hard to spot where I'd get my bowl and tongs, and some of the meat was too frozen to take apart and put into my bowl. The toppings can be hard to reach in the back- I found myself pressing against the clear display top a couple times, which isn't the cleanest approach. Also, I felt the vanilla (?) soft serve tasted a little strange ( kinda icy and tart like yogurt), but the cake, peanuts, and fruit are worth getting! The food was ready in 10-15 minutes, and the area is fairly busy with plenty of seating. Given its convenient location, affordable prices and delicious food, this will be my go-to area for malatang!

The ingredients here are just "okay freshness". I found that the mushrooms especially were not very good. The inside has a ton of seating. No problem finding a table to eat your food. The service here is pretty non existent. Some of the ingredients were empty. The ice cream is self-serve so my experience at the ice cream was very messy and sticky.

Mushroom Broth (1.23lbs, $27 including tax and tip)

My friends and came to Zhangliang Malatang this past week for late night dinner. They are open until midnight which is surprising and rare for Bellevue. They have over 6000 locations worldwide. Malatang (according to Google) is a a popular Chinese street food consisting of a spicy, numbing soup with a wide variety of ingredients like vegetables, meats, seafood, and noodles. However, most Malatang places have non-spicy broth options as well. At Zhangliang Malatang, you build your own hotpot by selecting ingredients from counters with your own set of tongs and putting them in your bowl. They have at least 50 different types of ingredients including everything from noodles to vegetables to seafood to meat and even stinky tofu. You can load as little or as much as you want for $14.99/lb (which I've heard is a little more expensive than their competitor, YGF Malatang). They additionally have a skewer section where they will grill the skewer for you. After you collect your ingredients, you weigh your bowl at the counter (mine ended up being 1.23lbs or about $27 including tax and tip) and choose your broth (Spicy pork bone, pork miso, tomato, mushroom, or dry seasoning). I chose mushroom as I wasn't sure how spicy the spicy broths would be, but apparently you can choose mild, medium, or spicy for spicy broths. After you choose your broth, they take your bowl and cook it for you in the back while you grab your free appetizers and sauces at the sauce bar. My friend recommended a combo of peanut sauce, soy sauce and chili oil and so that's what I put in my bowl. For appetizers they have edamame, honeydew melon, and grapefruit. After about 10-15 minutes, they call your number at the counter to pick up your bowl. For whatsoever reason, the bowls are gigantic and hexagonal. Perhaps easier to carry without burning your fingers? The soup was nice and hot for a cold fall day and the ingredients were fresh and high quality (they have a good health rating which is also reassuring). My only complaint was that the mushroom broth was pretty tasteless and so the sauce was an absolute necessity. I regret not going with the spicy broth but I will have to try it next time. Similar to many other hot pot restaurants, they have a complimentary self-serve soft serve ice cream (well frozen dairy dessert) machine. I was pretty full by the end of the meal, but had just enough room for a small cup. The interior is quite bright both in lighting and color. The walls, dishes, and furniture are all bright orange. The floors and tables were alright but I could tell they weren't recently cleaned. Service was alright but one of my friends received the wrong broth- she had ordered tomato but was given the spicy pork broth. Thankfully she noticed before she ate it because the pork broth contains peanuts which she was allergic to. Unfortunately though she also had to redo her bowl and had to wait another 15 minutes. In my opinion, they should've given her bowl for free or at least at a discount. As other Yelp reviewers have mentioned, they have a deal where if you give a 5 star review on Yelp or Google, they will give you a drink for free and so be skeptical of 5 star reviews. Ethically, they should only ask for your honest general review if they are going to offer an incentive at all. Overall: 3/5 for food, 3/5 for service, 3/5 for atmosphere

I LOVE malatang and I am so happy to have tried another place in the area. Zhangliang has great prices, ingredient variety, and awesome sides/desserts. I enjoy that they have a lot of seafood and interesting fish balls. I also think it's cool that they have skewers in the fridge; I want to try those next time. I was a little sad to find out that their main broth has peanut in it. I had to get the mushroom broth instead, which was still great but a tad subtle for my liking. My last note is that I love how they have fresh fruit and an ice cream machine! It's the perfect touch on top of a hot bowl of soup. If they open a location in downtown Seattle I'd go a lot more!

I'm so sad this is in Bellevue because it's my new favorite malatang place. It's reasonably priced, the soup base is really good, and they have a great selection of ingredients. I got the spicy beef medium and it was the perfect kick. My friend got the spicy (he's usually great with spice) and he was sweating. I love the selections offered; they had a lot of different Asian greens and seafood pastes (shrimp paste was so good) which I thought was unique. My husband and I each got our own bowl and total came to ~$30 and plenty of soup leftover to bring home. Will definitely come back whenever we're in Bellevue or nearby.

Food - 5/5 Comparable to YGF Malatang, but more variety of ingredients. Broth was flavorful and hotpot was cooked to perfection. I recommend and enjoyed the Taiwanese noodle. They also offer free ice cream from a machine like the ones you find at a buffet. One star was taken off because of the cleanliness of the bathroom. There was no hand soap, paper towels, and floor was a little wet and dirty. Cost - $15.99/lb. $10 minimum.

This is my new favorite Malatang place in the Seattle area. I would come back specifically for their beef broth; it was savory, spicy, and clean-tasting, without being too oily or heavy. The restaurant is clean and offers a wide selection of ingredients. Our bowls came in sporadically, but everyone got theirs within 15 minutes. We had an issue with two of our bowls; they added one person's noodles to another person's bowl. When we told the staff, they brought out another portion of noodles in soup. They used tomato soup for the noodles, which was wrong from the beef bone soup that we had initially ordered, but we didn't want to ask again. It's a relatively newer place, so I think the staff may need more experience, but taste-wise, this place is much better than the other Malatang places in the area!

I like zhangliang malatang because they have a wide selection compared to other shops. Upon entering, I noticed the layout was really weird. Immediately when you enter is where you grab the items you want to eat - it can get super crowded as people use the same entrance to exit as well. There's a variety of broths and mixes to choose from which is nice. Seating is self serve and it can be hard to find a table if it's very busy. Additionally, there's an automated speaker that calls out numbers (no visuals) when meals are ready so it can be kind of hectic with tight seating and numbers being called out. I liked how there was a sauce bar and an appetizer bar. There's things like salted peanuts, edamame, oranges, and watermelon that is self serve. At the end of the meal, you can also get a free ice cream cone (chocolate, vanilla, or strawberry). Overall, a good malatang place even though the ambiance and layout could be improved.

‼they are offering free items for 5 star reviews, be weary of recent 5 stars‼ Immediately down one star for bribing customers for 5 stars. The inside is fun, a bright orange that is kind of futuristic but also kinda 80's vibe? They recently changed the set up of the food area so it feels super crowded right at the entrance. Not the ideal arrangement. They had lots of seafood items but a few missing noodle options. The ramen noodles are in a different case than the rest of the food which felt odd. The sauce bar did not have bowls when we arrived about an hour after opening and had labels for each ingredient but they were too worn to read. For the food, I really enjoyed the mushroom soup base because I wasn't in the mood for spice and it wasn't overly salty. It had good flavor without altering the flavor of the meats I added. However, we didn't enjoy the bone broth as much as other places. Both of us agreed that the meat cuts were not as good YGF and were very fatty. They had tillamook(!) ice cream available for free at the end which was a nice finish with good quality ice cream. It was pretty loud in there with about 15 other people but the system that called out the numbers for the food pick up was way too loud even for the noise in the restaurant. Overall it was an okay experience. I left feeling pretty good but probably won't return since YGF is nearby.

I would start off by saying ygf is my baseline and this place wasn't as good. The entrance and exits are weird and not visible. I don't like that right. When you enter you are literally in bound to pick up food. Service was not great. We came right when they open and not everything was available like soup spoons and sauces. The server was not very welcoming. The place is pretty big and can sit many people so I can't get loud. Food wise: they definitely have more selections than ygf, such as exotic meats and skewers. The sauce bar also has more options including fruits, edamame, peanuts as well as ice cream as dessert. Broth though was not as flavorful. I got the pork miso and it was just ok. My husband got a dry mix and I do like the flavor on this one but it wasn't evenly distributed. The meat I got wasn't as tender either. One thing too is that there are ice in the food so if you accidentally add them in, that's more weight added. Overall, it's ok.

I've come for both lunch and dinner, usually shortly after they open, and never had to wait. Just looking at the crowd, you can tell this is an authentic place. As someone who travels to China frequently, this restaurant definitely meets my expectations. The Hunan-style spicy dishes really satisfy my craving for bold heat and flavor. I've tried the stone pot spicy tofu with meatballs, 梅菜扣肉 (braised pork with preserved vegetables), spicy lamb, stone pot black pepper beef, stinky tofu, and the fried oyster mushrooms. I loved all of them. These are the kind of dishes where you can easily finish a big bowl of rice--and still want more even when your belly is already full. I'll definitely be back to try more dishes. Service was prompt, and one small detail really stood out to me: during my first visit, they actually replenished the napkins mid-meal. With spicy food and the inevitable runny nose, that level of thoughtfulness is appreciated!

I'm also a fan of the 沸腾鱼 here (not sure what the English name is), which was one of my favorite dishes from childhood that is really, really hard to find done right outside of the Bay Area. For such an authentic restaurant, I'm also impressed with their high-end decor, quick service, and cleanliness. You definitely wouldn't expect it to be so good walking in! Would rather go to Diamond Bay, Tasty Szechuan, Royal Kitchen, (can see why they're busy and packed on a holiday weekday night and Sun Sui Wah is not) Went here for dinner for my grandma's 89th birthday with a party of 9 at 7pm. We ordered dishes typical of a 10 course meal including crab, Peking duck, live fish, rice, noodles, veggies, seafood, etc. The food was really good and didn't take too long to come out. Everything tasted good and we were all enjoying the family meal together and that's why I am giving 1 star because we will not be coming back. The service was absolutely horrible; ruined our dinner and wasted an extra 1-1.5hr of everybody's time. There was only 2 other tables in the restaurant and the servers started having dinner together at a table instead of working. I would understand if we were high maintenance customers or were giving them attitude but we did not. My cousin and I have both been FOH and BOH staff so we try to be understanding and patient when it comes to service especially coming from a Chinese background too. However, we asked for water several times, they never refilled anyone's water or the tea even once at this point it was end of dinner and 5 out of the 6 of us had completely empty glasses for about 30 minutes. We finally got water when we signaled to the Busser and he went to tell the same server again. We finished eating and decided to pay first so my grandma wouldn't try to pay. We tipped 18% off the bill since we were a large party and I wasn't about to punish all the workers for some water but what happened after made everything much worse. We asked for togo boxes and the server lady just dropped them off stared at our table and left. I was already wondering why she was seeming to be upset but seems like we were interrupting their dinner because 3 or 4 chinese servers were eating together at the table at the front when my sister's boyfriend went to pay. (That's why we didnt have water) I don't mind the workers needing to eat because I have been in their shoes before but please provide some service if you still have customers inside the restaurant waving at you. We wanted to leave just as much as they probabaly wanted to close at 10 pm(it was around 830ish now) We noticed that the cake they had been holding for us in the fridge was just sitting at another table in the restaurant. They saw us go grab it ourselves. We packed all the leftovers and started putting our dirty dishes and stuff onto the table because the workers were doing nothing. They saw that we were done but didn't want to stop their 8:30pm dinner I guess. Finally we asked them to bring us plates and clear the table. I have never had to ask the Chinese servers at any restaurant to clear the table before dessert, normally they do it for you, especially after you just tipped them almost $100 lol. The Chinese servers sent the bus boy to clear our table and guess what returned to their dinner! We again asked them for plates for the cake. It took so long to the point my sister missed picking up her prescription at 9pm. Not sure if the dim sum service is better but I'm pretty sure those 5 star service reviews are from the chinese servers' friends and/or family. Or the servers are taught to do nothing besides get the order and drop it off. Unfortunaly we will not be spending money at this establishment again because of the service and will be telling our family and friends in Issaquah and Bellevue to choose better places for sit down family meals. Hope others enjoy their meals because the food is still good

Luckily, we were able to find a spot right out front, so I'd recommend slowly circling around and keeping an eye out for people leaving. I found this spot through Yelp and had been really craving good Chinese food, so I was super excited to finally try it. My family and I came without a reservation and were seated immediately, even though the restaurant was very busy. This place is definitely known for larger parties, there were lots of families and extended families dining together, which really gave it a classic family-style vibe. You order a bunch of dishes and share a little bit of everything, which I love. The staff were really friendly and greeted us right away with complimentary tea. Fun fact: in the mornings, tea is sometimes an extra charge, but in the evening it's free. We ordered a few dishes, including the honey walnut shrimp (which is my go-to order at any Asian restaurant), salt and pepper squid, house special vermicelli noodles, and Chinese broccoli. The vermicelli was a clear noodle dish loaded with different proteins like BBQ pork, squid, and shrimp. Everything had great flavor, but my absolute favorite was definitely the honey walnut shrimp. It was perfectly crispy and delicious. My only complaint is the portion size for the price, it was about $21 for roughly 10 pieces of shrimp, which felt pretty expensive. Overall, the portions were on the smaller side for what you're paying. Toward the end of the meal, they treated us to a complimentary papaya soup, which was a light, fruit-based dessert soup and a really nice way to finish. Our total came out to about $80, so it's definitely on the pricier side for Chinese food. That said, the food was delicious, the service was great, and if you're in the Bellevue area, I'd still recommend stopping by.

I was not happy suddenly and asked why it was altered from the first one etc and a big argument from the server began that I didn't proliferate but she kept on and on and could not explain why all the changes by pen and saying that she was honest etc. insisting we "do the math" over and over Now we may have ordered that much food, but I know for a fact that the bill was clean written without alterations and $20 less than the corrected one. But still she couldn't give me a valid explanation for the changes and new total. In my opinion the high school age hostess made a mistake adding up before presenting the total to me and someone else edited it before running my card. If they had just admitted that I would not have been so disappointed. I don't believe that the staff here are dishonest and understand about mistakes but they did not handle it very diplomatically and it was a scene I didn't want to make. But I know that this was not the total presented to me for payment! Take a pic of your service card before sending the credit card to be run!!! It absolutely ruined our family outing and everyone was quiet in the car ride home. Not cool!!

From the moment you walk in, the cultural atmosphere stands out--many of the patrons are Asian, and on my visit, a few were even dressed in traditional garments, which added a vibrant, lived-in feel to the space. It's the kind of detail you can't manufacture, and it speaks volumes about the restaurant's credibility within the community. The interior itself is fairly average--nothing particularly modern or upscale--but it doesn't detract from the experience. If anything, it keeps the focus where it belongs: on the food. Service was a bit of a mixed bag. There were only two servers handling the floor, and they were clearly stretched thin. Ordering is done digitally, which helps streamline things, but you can still feel the strain during peak times. That said, the food started arriving quickly--our tofu noodle dish came out almost immediately, while the beef dish lagged behind a bit. Presentation leans traditional in a charming way. The plates and chopsticks have that classic, no-frills aesthetic that complements the overall vibe of the restaurant. Now, let's talk about the food. First, a word of caution: spice levels here are no joke. If you're sensitive to heat, you'll want to dial it down. But if you can handle it, the flavors are absolutely worth it--rich, bold, and deeply satisfying. The tofu was exceptionally soft, almost silky, and clearly freshly prepared. The noodles matched that texture perfectly--tender, well-cooked, and comforting. Pricing is another strong point. For the quality and portion sizes, it's very reasonable, making it an easy spot to revisit without hesitation. Overall, Nine Noodles is a great pick if you're looking for authentic flavors, a culturally immersive atmosphere, and solid value. It's not about fancy decor or polished service--it's about good, honest food. I'd definitely come back.

No one else seems to do them the same way. Noodle Nine doesn't serve dan dan noodles BUT the dipping sauce for the scallion pancake is the same as what Tian Tian used in their noodles! I absolutely used it as a dipping sauce. The scallion pancake was great- SUPER crispy. Cucumber salad was really good but aggressively garlicky. Actually spicy from just raw garlic alone. Beef noodle soup was delicious- we added a fried egg (I would skip it next time) and extra noodles on the side.

The beef noodle has a good kick but not overwhelming, you can still taste the flavorful beef broth. The noodles had a great chew. The kids had the pork noodles and that was also very delicious. 2 self ordering kiosks, most items had pictures which makes it easier to order. The gentleman behind the counter was really nice and helped me answer some questions regarding the menu. The space is nice and clean, shares the bathroom with Snowy Village. They also had homemade peach tea which was complimentary! Overall amazing experience. Kid friendly with kid bowls.

It's fairly small and there was no wait on a Saturday around 6:20 PM, but the tables filled up quickly with a bit of a short wait afterwards. You order at the front on the tablets, but a server will show you to a table and bring the food out. Liang Pi (Cold Noodles): All in all a solid rendition and a generous portion size, but I wanted all the flavors to be punchier / turned up a notch. Looking for more spice and more tang. Great mix of textures though. Spicy Cumin Lamb Noodle Soup: The noodles in themselves are really fantastic: super chewy in a satisfying way. The lamb could be a bit more tender, but the soup is nice and hearty for a cold day.
