The broth was super flavorful. Unlike pho places at home, there was not a separate plate of herbs (cilantro, mint, sweet basil), jalapeños, bean sprouts and lemon/lime. Instead, the bean sprouts were already tucked into the soup. However, there was no basil or jalapeños. We did receive a small sauce dish of peanut sauce & sriracha. The portions were a bit modest, which worked well for me, but was less food than expected for us since portion sizes at pho places are usually much bigger. All in all, the food was fresh, delicious and served with such friendly hospitality. This isn't a great place for large groups but rather an excellent place for a quick meal or takeout. I'm sure this is bc it's a healthier version and plant-based, which meant we could eat more and still feel good! You would be incorrect for so many reasons, because in reality, there is one of the best reasons to stop here, this is it... the Hedley Country Market. Why we stopped, we needed a potty for our kiddo. Why we stayed, we discovered a place that was making fresh made Sausage rolls, and Pies... wait, what? Yes, made in house, with someone who actually cares about the way food should be made, without all the additives, is this small town market. First off, the place smells like a bakery, but it's not that, it's the hub for this old mining town.. which stopped mining like a century ago, but it's not empty, in fact there are people here who are as nice as one can be, this market serves up kindness and tasty food. Yes, they have all the normal pantry items, crisps/chips, and liquor, but the Gem of it is the kitchen.
