Asked if they knew how to cut Korean style beef short ribs. Yes they do. They don't have the bone in kind, but will custom cut them for you, and hand them over. They look great. Just enough fat for tenderness and flavor. Gonna marinate them for a bit in some soy, sesame oil, garlic, pear juice and lime juice. THEN cook them over lump hardwood charcoal.
