Following the trail blazed by D.O.M., TUJU by Chef Ivan Ralston pushes modern Brazilian Cuisine forward by not specifically showcasing local Ingredients, but reinterpreting the world through Brazilian eyes inside his Restaurant at Rua Fradique Coutinho 1248. Open since 2014, and recently the recipient of a second Michelin Star, it is after passing through a hushed hallway that guests find themselves inside Ralston's "kitchen theater," a staff fluent in English leading guests to polished wooden tables that extend back towards the bar and urban garden on the patio. A quiet and focused space in Vila Madalena, everything from TUJU's design to Cocktail list indicative of a Chef who has spent time researching both technique and his culture, guests visiting for the first time are encouraged to partake in Ivan's "Season Menu," the carte blanche taking into account allergies and dislike but otherwise consisting of thirteen courses served across two hours. Trained in the kitchens of Maní, RyuGin and Mugaritz, the latter identifiable in modernist spins on local Produce, it was while sipping on a strong drink of Gin and sweetened Acid that course one arrived, sliced and aerated Pumpkin forming the background for Peas and Citrus with herbs that carry over nicely to a "Taco" comprised of sweet Crab and shaved Corn wrapped in Nasturtium. Continuing light with translucent Shrimp swimming in vibrant Broth, its follow-up a comparison of local River Mussels to those from the Atlantic bathed in Manioc Root Juice, fans of Uni will be stunned by tender Tongues amidst a tangle of Leeks with Parsnip Cream while torched Cauliflower finds itself the centerpiece of a thick Sauce that tastes something like Mole mixed with Soy. Shifting back to Seafood, a tender Tentacle obtained through Chef Ralston's relationship with local fisherman accented in umami, one would be hard-pressed to name a more interesting *looking* dish than Arapaima Fish in Seaweed Pil Pil, the combination of snappy Flesh and Skin Crisps equally tantalizing alongside Artichokes and Bean Sprouts. Completing savories with grilled Tuna and two types of Palm plus unsweetened Açaí, a diversity of textures seeing the best bites those that incorporate a little of each into a single forkful, it is by way of Cheese that the palate is transitioned, the Blue and Parmesan-mimic particularly impressive, as too was housemade Bread and Butter plus the bright green Fruit described as a Fig. Not scaling back on sweets, Dessert number one perfuming stewed Berries with Mint in a makeshift Sundae, it was while Coffee dripped tableside that a tangy Yogurt Parfait dazzled, the Pour Over subsequently enjoyed with housemade Chocolates filled with everything from Dulce de Leche and Cashew Fruit to Garlic. read more

I was pleased to finally get a reservation at Tuju after several times of being in São Paulo. Tip: Make a reservation for early in the evening, when most local people are not yet having dinner. Highlights: -We loved the bread with salt and Brazilian olive oil. Adding the salt really set it off. -My quinoa dish with flowers was cool but not mind blowing -Excellent service from start to finish. I can't even think of any small things that were not perfect on the service front. -Cauliflower dish was fine but was really marked by the brown butter sauce and then even more by the German Sauvignon Blanc, which accentuated the spice underlying the sauce. That said, the dish itself was a bit flat for me without the wine, and I would even say it needs the wine in order to shine. -Loved the Spanish red wine, which was fruit forward and so drinkable. -Had delightfully cooked lamb towards the end -Lemongrass tea...yesss On the whole, Tuju was four and not five stars because, while it was absolutely an enjoyable experience, the meal wasn't a two-star Michelin meal for me. The dishes were nice but nothing was mind-blowing or unforgettable. I simply can't stack this up against D.O.M. or even some one-star offerings in the city, although the service was excellent. The pairings are really key here. I feel the meal overall would have been nice but not nearly as pleasurable overall had we not done the wine pairings. Altogether, it was good but I wouldn't necessarily go running back when other options abound in Jardins and Pinheiros. read more

Amazing Experience. It really deserves the one star from Michelin guide. Located on Vila Madalena District, this place is very discreet and elegant. The environment with the open kitchen and the decoration are really cool. Regarding the food, I started with the coxinha, which was very tasteful. They make it with D'angola chicken. Then I had the fish of the day, with a pumpkin gnocchi as a side. The texture, flavor, presentation and harmonization were impeccable. They have a good wine list, as well as a bar where you can have some very good pre-dinner cocktails. The service was really good too. Overall, I had a fantastic experience. IF you're looking for a place to eat a classy brazilian cousine, you should add this restaurant to you radar. I would say it's on my top three list of brazilian restaurants. Tuju is a beautiful, modern and minimalistically decorated open kitchen restaurant and bar. We were politely greeted by the hostess who very quickly attended to our request to be seated at the bar. Let me breakdown my Tuju "tale of love" in 2 parts- the Bar & the restaurant. Bar We had been hearing good things about the bar at Tuju ever since Maurico Barbosa took over the reins at the bar - so we decided to check it out for ourselves. I don't say I am an expert at cocktails but with my several visits to Frank, I certainly know what makes a great cocktail. The bar is located towards the back of the restaurant space, it's hidden yet at the same time the glass in between the space and the coloured lights get it the due attention - the bar decoration is very modern with a blackstone bar and cool looking, but not very comfortable, bar stools. However the magic happens behind the bar - Maurico is very focussed, very detailed and they passion with which he talks about and makes the cocktails is something I've seen in a very few bartenders in the city. I tried 3 classics to see how good he is - a Rye De Louisiane, an aged Balsalmic Negroni and a Perfect Martini and boy ! The drinks besides being beautifully presented are really well made with awesome alcohol quality and perfectly balanced. One can see the craving for perfection from Mauricio. With the drinks we had a side of 'galinha de angola coxinha' and here one can see why the food at Tuju is spectacular. Restaurant We decided to get some food and moved to the dining area - the menu is quite concise (good for people who have issues with deciding) and since we were hungry, we decided to order the main course starightaway. One of the dishes that caught my eye was a Rice dish with Pork ribs and Octopus - and to test Tuju's class I ordered it - I am still in a state of bliss - the rice was perfectly blended with the pork ribs and the octopus was the best I have ever eaten - Tuju definitely is a notch above any other restaurant in São Paulo. The quantity and temperature of the food was absolutely spot-on and at the end of my Tuju experience I knew that I had fallen in love. Tuju isn't cheap, it's a discreet spot BUT in my opinion this place if not the best, is one of the best places in São Paulo - an awesome bar and an even better restaurant experience - bliss, absolute bliss !! read more

Went there the week they opened and was VERY disappointed. I had the menu degustação and did not enjoy it at all. -One of the first dishes they served was an oyster which smelled bad (like it was rotten) so I did not even try it. My husband actually tried it and said it was awful. When we told the waiter they had the audacity to say that the chef checked and that it was actually really fresh....unbelievable! At least they could have apologized for serving something bad. Beyond that dish, the fish was a bit dry, the foie gras was actually good. Another dish I was disappointed with was the noodles with sea urchin. It just wasn't a well put together dish. I was really hoping for something special and it feel flat, with none of the flavors really working well together. Overall an expensive restaurant with mediocre food.
