Housed in a pristine, modern facility, the restaurant boasts ample parking and plenty of seating both indoors and out on the patio. By 11:00 AM on a Wednesday, a steady line was already forming--clearly a favorite weekday lunch hub for the local oil and gas crowd. The Meats: Pork Ribs (The Star of the Show): Absolute perfection. Coated in a balanced salt-and-pepper rub and finished with a subtle honey glaze, these ribs strike the ideal balance between savory and sweet. They feature a flawless bite--tender enough to pull cleanly off the bone without falling apart. Turkey: Exceptionally juicy and moist throughout, framed by a well-seasoned bark that keeps every bite flavorful. Jalapeño & Cheddar Sausage: Made with a traditional coarse grind rather than a double grind, offering a great natural texture. Packed with a generous amount of real cheddar and jalapeño, all snapped tightly inside a firm, crisp casing. Brisket: Respectable, though slightly mixed. The bark carries good flavor without being overly peppery, but it lacks a prominent smoke ring. While the outer edges are tender, the interior meat leans a little dry and stringy. The Sides & Extras: Green Chile Mac & Cheese: Creamy, rich cheddar sauce infused with just the right level of green chile heat. It makes for a standout side that cuts through the rich pork ribs exceptionally well. Jalapeño Poppers: Classic cream cheese-filled peppers wrapped in bacon. The bacon is rendered and cooked nicely, and the cream cheese cools down the pepper's kick. While solid, mixing in some leftover brisket or chopped chicken would elevate them to elite status. They're open to eight. Service was amazing. Sherry and May made the experience of dining here for the first time super enjoyable. As for the food amazing I would place this barbecue restaurant in my top 10 if not top five that I've tried. The pork was amazing without any sauce. The sausage was good, but the star of the plate was the hatch macaroni just the right amount of spice just the right amount of seasoning so good. Their barbecue sauce was so flavorful and complemented everything perfectly. Nice quick dining experience with a great little atmosphere of just a local heritage one of the highlights is the sauce bar with multiple sauces, peppers, pickles and so many other choices for sure 100% have to try this if you're in Midland. Upon walking up, I saw the pig on the sign and had a good feeling. It was moderately busy in there with some awesome metal music playing. Already a good start! The menu consisted of the regular you would expect from any BBQ place (a variety of meats, sandwiches, etc) but what makes them stand out are the more interesting dishes like Korean fusion dishes and stuff like that. I went with the basic half pound of brisket and slightly more adventurous brisket fried rice. The brisket was really good and juicy and paired well with the Pachuco's BBQ sauce, raw onions, and roasted chiles. The fried rice was really dry but still tasty. I will definitely visit again next time I find myself in Midland.
