This local food truck is situated in a spacious church parking lot just west of I-35 and Brighton. When you arrive, the menu can be a bit overwhelming if you're not prepared, but don't stress--just pick something, and you're bound to enjoy it. We decided to order a little bit of everything, and while I can't recall all the details, everything we tried was amazing, especially the pizza birria, which was the best I've ever had. They cook each order fresh, and instead of waiting around, they give you a beeper similar to what you get at restaurants, allowing you to comfortably wait in your car. It's a convenient touch! One thing to keep in mind: they use a generous amount of cilantro in their dishes. It's coarsely chopped, so you can easily remove it, but if you're like me and think it tastes like soap, you might want to ask them to go easy on it or leave it off entirely. Your current occupant of the White House warned of Taco trucks on every corner a few years back and I've been patiently waiting. Finally the dream has come true! At least for a corner near my workplace in Riverside. Tacqueria Ibarra has set up a semi-permanent home next to the QT. It took me a week to visit them, but have returned twice more in the span of 3 work days. The price and value are right on the mark and the flavorfulness is overwhelming. I've twice had tacos and then a torta on the 3rd visit. The Asada was quite good, but the pastor and the sauce was best in class. Hot off the grill from nice people with plenty of meat, cilantro and onions on the tacos. Torta was hefty and tasty. The burrito my coworker had was Biggly Huugge! If this is the evil future that we were warned about, I am excited to be on the taco truck / bandwagon! read more

Wow. Best burrito in KC so far, and from a food truck?? Have eaten here at least five times, and my fave is the carne asada burrito minus beans and lettuce. It reminds me of the times my high school friends and I from San Diego would park and walk across the border to Tijuana to eat some authentic Mexican food back in high school. There is plenty of flavor in the meat, and the tortilla is perfectly chewy and griddled to add the slightest buttery crispness to the outside which is a nice touch. The rice soaks up the flavor from the meat and the pico de Gallo tastes fresh with great fresh cilantro flavor. The included salsas were great (esp the tomatillo salsa).
