Strick's Specialty Meats is one of the best wild game processing shops in the southern half of Mississippi. It's worth the drive up from the coast to get my venison processed there, and I've been using them for years.
If you are a fellow deer hunter and are successful, you'll end up with at least 50 or so pounds of meat from a hunt. You could grind it up or process yourself, but doing so requires a lot of expensive equipment. Getting one processed isn't cheap, but a lot of what you're paying for is good packaging and Strick's nails that.
I have had smoked sausage, summer sausage, snack sticks, burgers, and even hot dogs made here. Their venison and brisket jalapeno bacon ranch burgers are my most favorite thing on the menu. They take 5 pounds of your venison and you get back just over 8 pounds worth of burgers, shrink-wrapped in pairs for easy storage.
Their snack sticks are also very popular and they offer more than a dozen different flavors. This also requires a 5 pound minimum of venison and you'll get back roughly 10 pounds of product because they add pork and seasoning. My favorite is the pineapple pepper jack, but the apple cheddar and hot honey are also great.
If you want smoked sausage, you need to provide 10 pounds of venison and you'll get back about 15 depending on what they add, but all are done with 40% pork added. Beef is also an option. Their regular smoked sausage is great for grilling or many recipes. I really like the pineapple pepper jack because of how the sweetness caramelizes when you cook it. They just recently started doing brats, which also require a 10 pound minimum.
To get your deer done, just pull up to the door and they'll come out to get the meat. They are always friendly and helpful loading and unloading the product. Next they will weigh what you have and then go over menu options. Because they are quite popular, processing time can take up 2-3 months during deer season. After season ends you can expect a quicker turnaround.
In addition to game processing, they also offer a wide variety of wild game meats that you can get as steaks, ground meat, or in various sausage and burgers. Meats they carry include elk, bison, ostrich, gator, and more. I've even seen camel meat in the freezer. read more
