Iv'e been going to The Star on and off more or less non stop since 1985. Going non stop a part from a couple of years, when sadly the pub was in the hands "Of others". The period "Of others" guessing (3 yrs?) now established in local history and known as "The sad years". I'll talk about the "sad Years" again later.
Over the years have had the pleasure of making a comprehensive fool of myself many times at The Star, eating great food with good wines and well kept Sussex Beers. Must have spent a bloody fortune there over the years. Ah well.
Sue and Mike understood/understand the fundamentals, and much, much more, of running a pub.
1. Nice smart, clean polite staff. Like attracts like. Think about it, it's not rocket science! If you have morons behind the bar, who have the intellect of a packet of crisps, the chances are this is the type of client you will attract. Nice, smart, clean friendly staff. The kind of people you would be happy to sit and have a beer with yourself. Like attracts like, it's as simple as that.
2. Basic clean, well cared for, loved building. Well, let's be truthful, the Star's got a head start here. Fabulous building, Sue and Mike kept it clean, flowers on the bar, fresh smelling, and always-looked great.
3. Good basic food. Well, let's be truthful, again, the food at the star for years was the standard others tried to get too. Over the years, almost (Almost) 100% fabulous, great fresh food. Perhaps one of the very early Gastro pubs? Bloody great food, served in nice bar. It was never cheap but was always good. You get what you pay for. Cheap and good just defy the most fundamental laws of business economics. Anyone with a brain understands that it is just not possible to have "cheap and good" in the same sentence. Value for money, good/great food is what was the rule of the day for years at the star.
4. Toilets. Let's talk about toilets for a moment. It may be the guy (I say may be) who bank rolls a couple's night out. However, I bet the woman decides where you go. What couple, guy/girl whatever would want to go to any pub where the loos have a disgusting ammonia pissy smell of urine. For Christ sake it's 2010, we should be past this, way past this. Thank god it's always been good at the star.
Just in case it's not clear, points 1 to 4 have been professionally taken care of by Sue and Mike, and is one of the reasons they ran the best pub in Sussex for years.
The Sad Years
Well, I guess all good things come to an end. Yes, Sue and Mike left the star and I'm guessing it was in the hands of Others for about 3 years, thereabouts. During this period the good will, the loyalty of customers was destroyed by the occupiers who seemed to know as much about running a pub as I do about flying Jumbo jets. In short nothing. The atmosphere, the staffing, the menus, the fires, the welljust everything was destroyed. It seems just impossible to believe that a pub that once was busy, thriving, great food, great staffjust great, turned in to a swirling cesspit of utter ignorance and crap food so easily. (Christ was the food crap!) Just how can anyone destroy a business so easily? The quick destruction, of what once a great Sussex pub, all seemed to happen with bewildering ease and skill. During "The sad years" I went back, it was not good. "Just a bad day, I keep telling myself. I'll try it again I thought". It was over, it was not good I (And many others, let me tell you!) was living on memories and ghosts in the corridor. It would never be the same again!
Well, move the clock forward, times do change, things move on. December 2009 Sue and Mike Chapel move back in the Star. Good news for all the locals, and I quickly add all those who travel from afar! Went back in, bar was nice, toilets were clean people were polite. Hmmn, I thought, that's a good start. It got more positive as the eve went on, good foodno, great food, very modestly priced. All in all an overwhelming change from The Sad Years. I have no doubt that for the benefit of us all the Star will be returned to it's former glory just as soon as the word gets around. Let's cut to the chase, it's going to be good, not a lot of people going to teach Sue and Mike a lot about running a pub.
It seems we have come out of the wilderness, out of the darkness, out of the dessert in to the sun and all it's glory.
