This is a family business and it shows in their flexibility. My son's wife was lactose intolerant, so they just took the milk based binders out of their sausage recipe. The mild Italian in bulk was still just fine and the links were too. They work with local farmers to provide pork and buffalo at fair prices. It is a nice clean shop, custom built for slaughter to smoking and freezing. Nice folks too. read more
