The Smoke This Rib! Cambridge Ribfest has a few years under its belt now, and several good local restaurants served up rack after rack of lip-smacking rib goodness. This was fairly well-organized, and the punch-card system insured that folks got their rib quick, and moved on to let another person jump in and grab a bone. Restaurants were selling ribs as well, along with cornbread and grilled corn, and gumbo too!
The rib offerings, for the most part, were unfortunately a little soft. And by that I mean there's some truth to the rumors that folks in the Northeast just don't know good BBQ.
The clear winner, by far and away, was Eastside Grill, and it was not hard to understand why: They were the only team with a real BBQ smoker! So the ribs were slow-cooked in smoke, then finished over charcoal for a nice crust, the way it should be! Their sauce wasn't the best, nor was their dry rub- but they know two things, 1. that ribs should be slow cooked so the meat stays tender, and the fat gets to render, and 2. "falling off the bone" means "overcooked".
Abigail's did a great apple cider bbq, but their rib was incredibly overcooked. Puritan & Co. did a lamb rib that was amazingly flavored, but alas, so fatty that most of it was inedible. Quality offerings from Tupelo and Trina were tasty, but flat on texture. Lord Hobo's utter disaster, due to what i believe was the use of Matchlight charcoal, made their ribs taste literally like a chemical fire.
The beer corrals were well attended, with offerings from Slumbrew and Harpoon, and as always the presence of armed police ensured that nobody had a better time than the law allows.
