They use sushi-grade tuna and will serve it as rare as you like (Tuna Tartare) to fully cooked. IMHO, their tuna is better on the rare side. The other meals we had there (my wife's favorite goat-cheese salad, and a lasagna de ternera) were also quite good, but - when a restaurant in tuna country is known for its tuna, order the tuna!
