Their menu seems to change frequently based on what is available but on a high level, expect every course to be crafted with local ingredients. Reservations open 6 months in advance so make sure to plan it out early! Starting with Mallorcan appetizers, a tuna bite that was super delish, potato salad in a crunchy shell, and a red shrimp tart that tasted a bit too briny. Then they bring out a whole tray of bread with their in-house olive oil The oil is so fragrant and good, you can't help but CONSUME. Our first dish was a beautiful (peeled) ramallet tomato served with grilled strawberries and green tomato juice. This tomato was so sweet we thought it was soaked in syrup. Turns out they're just that sweet A gorgeous red prawn that they behead in front of you. Super interesting bc they use a French press to juice the heads and make a broth! Fish course is always my fav A beautiful sea bass with meunière sauce, poached spinach, and pine nut stew. I loved this. The soft nutty pine nut flavor worked very well. For the main, started with the tenderest piglet shoulder ever with crispy skin & celeriac puree. We were stuffed after this so the lamb course felt quite daunting. That being said, the lamb skewer was my favorite It was so juicy and delicious. The tenderloin was also good but it was a leaner cut which felt kinda heavy. Great accompaniments tho, I do love a parsnip puree. The parsely emulsion was shockingly bitter, thought I was eating grass, but it did a great job to cut through the meaty flavors. Honestly, felt bad bc we barley touched the second piece so I think they could reduce the portions. To end the meal, a pre-dessert with carob and date bread. Flavor wise, there was too much going on with the fennel, orange sorbet, and some kind of pistachio sauce, so it was kinda confusing. The final dessert is very exciting and hands on They bring out latex gloves and a beautiful bowl of chocolate(?) lemons filled with creme anglaise. You throw it at your plate and enjoy it with fennel foam and honey ice cream. Super light and the citrus flavor was a great finale Overall, this was such a feast so I think you would do better ordering the 7 course or a la carte. After seeing endless amounts of Flor De Sal being sold everywhere we went, from the Flor De Sal…read moreshops to running into them in souvenir shops. After sampling salt at one of their locations, we fell in love with the flavored spicy salt. Realizing they had salt, it made me so curious to know more. After a quick research, I came to find out they harvested this kind of salt in the island of Mallorca in the Salt Flats of Es Trenc - a naturally protected area. This gourmet sea salt is so unique as the "Flor de Sal" (salt flower) is hand harvested from salt that delicately forms at the surface of the water during certain conditions. To harvest it, it has to be harvested with love - like our amazing tour guide said. Coming to this place to get education about this incredible salt, the process, the work and how pro eco system they are, was one of the coolest educational experiences. For only $10 you can learn so much about salt and then enjoy salt sampling and shopping. We even got to see flamingos from a distance and learn how they (and the pink salt) get their pretty pink color. So COOL. Sadly, the shop was down that day but they gave us a voucher to go to another location and enjoy a free drink. We weren't able to but who cares. We did buy more salt and now whenever I sprinkle flor de sal on my food during special occasions, I think of all the hard work that gets poured into harvesting this delicate salt. Be sure to take the tour so you can comprehend everything that goes into it and you will never see salt the same way ever again.

That store had all the exotic blends.... Gelato and a bathroom! Very pleasant service and a large parking lot at the mine. St parking in town. Gift shop at the mine was closed due to construction. Note location was slightly different than shown, making a map change.
