Last night we bumped into Republica as we walked along Aristides as we have many times on our visits to Mendoza. We were immediately drawn by the sleek, modern and eclectic look of it. It looked and felt like it belonged somewhere in SoHo or along Melrose in West Hollywood. The staff is polite, hot and almost perfectly bilingual. But the menu is the real rock star. French influenced Latin American dishes featuring plenty of fish in the land of meat! My husband ordered the Maltagliati (literally "badly cut" in Italian) which was fresh and home made served in a white sauce with shell fish. I ordered the sole and I have to say this is the most perfectly cooked fish I have ever had in my entire life. Naturally being in Mendoza this restaurant features an excellent list of wines but their full bar serves cocktails prepared with almost fastidious precision by their Spain trained bartender Agustin who was extremely polite and friendly and who knocked our negroni and dirty vesper out of the ball park so I had to order two rounds! República is a must stop on your visit to this foodie mecca. read more
