One of the most memorable bar experiences of my life! We went to Rayo, which made the North America's 50 Best Bars 2023. We walked in and were escorted into the second oldest elevator in Mexico City. Inside the elevator, a gentleman opened a bucket of ice and poured us glasses of chai-infused cocktail as a starter.
Then they brought out a glowing box (think like a Pandora's box) and said this is the menu. I was thinking, "What could possibly be in this box?" Inside were ten vials of liquid, numbered one through ten. The bartenders explained that we would pour a drop from each vial onto our hands and taste. Water was provided as a palate cleanser in between vials. This bar is very into exploring your senses. You don't know what is in the vials, it is up to you to interpret the flavor on your own.
You then decide which vial you like best, and order it as a cocktail. The bartender walked us through what was in the cocktails--each one has their own unique story. Rayo aims to emphasize Mexican spirits other than tequila and mezcal, providing offerings like raicilla and Mexican rum. The cocktails are paired to regions, and the ingredients and garnished use fresh produce from those regions. One of our cocktails with guava and raicilla had a piece of crispy Jalisco kale, alternating between sweet and salty. Another had a "chicken" shaped garnish which was actually made out of chips, paying homage to the hot sauce covered potato chips sold on the street.
The bartenders act as chemists as well, creating foams, bubbles, and clarified liquids. On our way out, we were offered a complimentary mini-cocktail of a floral yuzu cocktail with sea salt foam that looked just like bath bubbles, it tasted like drinking the ocean. We had a great conversation with the bartenders the entire time because we always like to sit at the bar. The hospitality was incredibly warm and I think the bartenders appreciated our genuine curiosity. I will never forget this visit and I recommend Rayo to anyone who visits Mexico City. read more
