Gilles was an excellent instructor. My partner and I are beginner cooks, and he was very patient with us and the rest of our group. While in Aix recently we took a day long cooking class at Provence Gourmet led by Chef Gilles Conchy. It was an excellent way to spend time in the French countryside and learn a few things about Provence cooking. The day started at 9:30 with a trip to the Aix market, followed by a wine tasting to a local vineyard then off to 4 hours of cooking at Gilles country home, about 10 miles outside of Aix. We made fried zucchini blossoms, stuffed vegetables and nectarine tarts - along with some wine from the winery. Gilles this a great chef and a great host. It was well worth it. Yelp France is pretty new, so there aren't many reviews yet. But trust me, on Trip Advisor, Gilles of Gourmet Provence has all 5 star reviews and is rated the #2 best cooking experience in Aix. The only reason he's not #1 is only because of the length of time of business is less than the #1, hence less reviews. But let me tell you, if you are looking for a unique experience to learn about the food, culture, and history of Aix, then look no further. Honestly, from our entire week long trip in France, our day spent with Gilles is by far the most memorable and amazing experience. We began by shopping the beautiful outdoor farmers market for our fresh vegetables and fruit. We then went to the boulangerie to pick up fresh bread. After we went to the boucherie to pick out our fresh meat. The experience of shopping the market and the shops with a local, is alone, an amazing experience. Along the way, Gilles told us stories about the town, about the people we met, and about his own personal history and experiences. We then got in the car and drove out of the main city into the countryside. First stopping at a beautiful winery, Chateau Simone to pick up an amazing bottle of Rosé and then we headed to Gilles beautiful home that he shares with his wife and children to cook a three course meal together. The experience of learning how to cook a beautiful French meal, in the kitchen of Gilles home, with my husband, is one that I will never forget I really could go on and on, but this review is already too long and I'm not sure if you're even still reading. But really, if you find yourself in Aix or Marsaille, do yourself a favor and block out a day to experience this. You will be glad you did. Gilles, thank you for opening your home to us. It was a wonderful day from start to finish. He is a lovely gentleman who met with us downtown, we walked to the market and get suggested what we should make. After we shredded we looked around the market for everything, samples a few items and then headed to a winery. Did and tasting and then off to his home to do some cooking in the outdoor kitchen. My wife and I had the most amazing time. Fantastic experience. We were on a seven day cruise and this experience was honestly the highlight of our trip. We are from Massachusetts but Gilles made us feel like we lived in Marseille and an old friend was spending time with us passing on his knowledge of the local food and culture.
