Being from California, I was surprised to hear that they opened their newest location at the Fontainebleau in Las Vegas last month.
We ordered the tuna tostada that people rave about. It was ok. We could have used some more assertive flavor from acid or spice. I couldn't eat a whole fish (their signature dish), so we went with shrimp in their adobo rub in a taco and fish al pastor. These were also just ok, but the price tags are high for their entrees. I've seen pictures of others fish al pastor with onions and cilantro and that certainly would have added something I felt was missing.
The one thing we ordered and loved was their seasonal mackerel ceviche which was in an apple/citrus/olive oil sauce. It was unique and delicious.
I think their ceviche and aguachile are probably their strengths, but the cost is pretty high to leave feeling underwhelmed. Honestly, we will be going back to mi compa chava for better seafood
