I started with the Caldo Gallego, a hearty broth (with an offal aroma) made with fatty pork, potatoes, greens, and other vegetables; and the Caldeirada de Calamares, a hearty stew of calamari pieces, potatoes, peas, beans, and carrots in a mildly spiced sauce.
