Unlike shops that lean toward tourist-friendly novelty flavors, Brivido stays true to tradition -- you can taste the authenticity in every scoop. I ordered a small cup with these 2 flavors. Marron Glacé: It was the first time I saw this flavor OR maybe I just was not paying attention to it since my eyes go directly to pistacchio. This chestnut-flav gelato was a revelation. A sophisticated flavor that captures the essence of candied chestnuts. It's gently sweet layered with caramel and this is now my new favorite. Cremino al Pistacchio: A luxurious blend that balances the creamy richness of white chocolate with the nutty elegance of pistachio. It's a flavor that showcases Brivido's mastery of tradition. The texture is dense and smooth, a hallmark of true artisanal gelato. Btw, this is also the only gelateria that we've been to that offers fresh whipped cream or chocolate sauce topping. Verdict: Brivido is a gelateria for those who want the REAL Roman gelato experience. The Marron Glacé and Cremino al Pistacchio are must-try flavors that showcase why this spot stands apart from the tourist-oriented shops.

For starters, 'gelato' is not the Italian word for 'ice cream.' It translates to "frozen" or "freeze". It traces its roots all the way back to 1565, and its invention is attributed to a Florentine, Bernardo Buontalenti. It differs from a North American version in that it has more milk and less cream than we are used to and no egg yolks. It is also churned at a slower rate and served at a slightly higher temperature. This all makes gelato denser and smoother than hand-dipped ice cream. Because there is less milk fat, the flavors coat one's mouth and seem brighter and more intense. Located in the San Giovanni district of Rome, my partner, our friends, family member, and I decided to go to Freddo, meaning "cold" in Italian, for some local gelato. The first step to finding top-quality gelato is where many tourists fall victim. Any gelato one's eating should not be piled up so high that it resembles a mountain. Look for flat metal tins, which may have lids on them. This establishment uses only selected ingredients to elaborate their classic flavors and unique combinations. In order to obtain a natural product, they don't use emulsifiers, preservatives, dyes, industrial flavors, or hydrogenated or refined vegetable fats, which some of us got some frozen treats. They were so creamy with many delicious flavors and the best around. Portions were healthy, and the price was comparable to the area. The staff was friendly. As one plans an Italian trip, remember that gelato is more than just a treat: it's an experience.

Our guide said this is his favorite gelato spot, owing to the creativity of flavors and rotating menu offerings. We liked it so much we went back once on our own. They were busy both times, with a line out the door, but the people working were friendly and patient (which was especially noticeable on our first visit, when a group of 10 tourists wandered in after a few hours drinking, eating and drinking our way through the town.) The did have some interesting flavor combos lined up for us to try, but I went with the flavors I craved. Everything was tasty and creamy, and the serving sizes were generous. They offered whipped cream on top of each portion as well, which we passed on, the gelato was yummy and creamy enough without the added cream. The shop is tiny (explains the line) but clean, and they do a good job of labeling each of the vats of gelato they have on display. Definitely a winner, and seemed to be quite popular with locals.
