It rotates every month and they make the food fresh for the whole restaurant and it is served family style to your private table. In other words, each table in the restaurant is eating the same thing. You can watch them make the pasta as the first course is being served. It really feels like you are in someone's home. The night we came, the opener was a meat plate. Plenty of salty Italian meats to make it a meal in and of itself. You can ask for as much as you want but save yourself for all the courses. Next came skewers of lamb sausage. They were so different and had a tang to them that was amazing. The third course was backed artichokes, nothing too special. Next was a beef broth that was excellent with bread. There was a soupy consistency to this. The pasta was next. Gnocchi was out first pasta. I could see them making it so I knew what was coming and the timing was amazing. This was followed by ravioli which was so fresh again, you could taste it. Our final course was a wild boar that was so soft and juicy. It really got me hooked on this meat. The desserts were average but who cares, we were so stuffed by then anyways on the good stuff. Plan to spend over 2 hours here as this is a meal to experience for sure!!

We were stuffed from our feast but couldn't pass up the dolce course, a pastry stuffed with an orange, walnut, and honey filling and then sliced--apparently a specialty of Pitigliano. We also really appreciated that the restaurant's inside rooms are housed in a tufa cave, which was very atmospheric and welcome on a chilly December day. We ordered crostini with tartufo but received two orders and we were charged for it. It should have been complimentary since we didn't order it. I had caco e pepe and then a scallopini dish with mushrooms; and my friends and I shared a side order of spinach. All very good. We shared a half carafe of white wine. Our waiter later showed us the tunnel area below the restaurant, which was pretty neat to see. Our meal came to 26 euros each, pretty typical. I wish I had discovered this place earlier on in my trip, as it would have been lovely to have lunch outside in the garden area.

After parking down below and making the five minute stroll up the hill into town, we arrived at Il Pozzo. The people were kind, attentive and humored my questionably passable Italian which must be a chore. We each had a glass of a Brunello, which was preserved and poured with the Coravin system. Many of the great wineries in the area recommend Il Pozzo to their visitors, and you can tell that the restaurant has a great respect for the region's incredible wine. The pinci al ragu had a perfect chewy texture and the beef sauce was rich and aromatic. Pinci is like a slightly plump spaghetti and you can tell that they take local pride in making it by hand. When in Tuscany, you have to have some wild boar, so unsurprisingly we ordered the cinghiale alla cacciatora (stewed wild boar) which herbaceous and less gamey than you might imagine. On the side, we ordered the facioli cannellini all'olio - white beans in extra virgin olive oil. While this isn't the most exciting dish compared to everything else, the beans were nicely cooked and the bath of oil and cracked pepper gave a pleasant, simplistic flavor that helped balance the otherwise tomato-biased selection at our table. Finally, the gnocchi. Perhaps the best thing that we ate during our two weeks in Italy. Light, fluffy, pillowy texture with just the slightest chew. A sauce that checks all the boxes of being savory, bright, aromatic, yet simple enough to be nostalgic. Absolute perfection. You'll have dreams about this gnocchi. If you are anywhere near Montalcino, make time to come here. The town is charming, the people are friendly, and the food is delicious.

The pasta was absolutely amazing; so fresh, so light, and so simple. I noticed during our travels that many of the dishes around Italy contain very little ingredients. Its the quality and the simplicity and freshness that makes all the difference - something I will try to reenact in my own cooking.

Even though we didn't have reservations and they were fully booked, Roberto was kind enough to find a spot for us -- and for the second time, we weren't disappointed. This time we started with polenta with porcini mushrooms; I had pork shank with roasted potatoes, the pork so tender it fell off the bone. My friend had the rabbit stuffed with fennel potatoes, which she declared exceptionally good. We shared a plate of roasted vegetables and had a lovely bottle of local white wine. The staff was very attentive. It's a most attractive restaurant, very affordable, with a creative and delicious menu.
