    Ravioli I made!

    Fun date night with Mateo! We made homemade Ravioli and cacio de pepe and tiramisu. All yummy dishes ... low key cooking and no pressure to make it perfect. It's very close to a beautiful basilica so we toured the church first before going to the class. Mateo had appetizers for us so we weren't starving. He gave us good tips on how to cook at home and add or change things up with the basic recipes. Great job Mateo. Do this if you have some spare time in Rome!

    Hands down best part of my European trip! This is a must do for a hands on cooking class. Many other classes are demonstration only and this class is hands on with individual stations to cook. Matteo was patient and answered all our questions.

    Matteo was great! He was so personable, and gave reasoning behind everything we did so that we knew the reasoning, so we could adapt when we got back home and didn't have the exact equipment or ingredients back in the states. Everything was so delicious, and we had an amazing time! Would highly recommend this class!

    I was looking for a good class for the family as we were staying in Rome. I wanted something that made really delicious food and be in close proximity to Rome. One Day Chef was the perfect choice. First of all the location was so close that we walked to it from our place. After the class was done, the kids were pooped, so we took the train back, which was located just 2 min. from One Day Chef. Matteo, was amazing! From the time I booked, he was easy to communicate with and is willing to help with whatever we needed. The food was the best in Italy. We arrived to the shop and Matteo had the most delicious pizza waiting for us to eat. It was so simple, just delicious bread, seasonings and cherry tomatoes, but it was the best pizza we had in Rome. I couldn't believe it. We ate it all up. We made 2 pasta dishes and tiramisu. It was so fun and simple, that even my 11 year old was entertained the entire time. Matteo's english is terrific and he is a great teacher. We made ravioli's with tomato sauce and a Spaghetti with a white cheese and pepper sauce. It was so simple and authentic. I will be making fresh authentic pasta forever now! Matteo made cooking simple and incredibly delicious. A big thank you to Yelp contributors for helping us find this amazing place. It really was the highlight of our trip!

    The market tour and cooking class were amazing. we met at the largest market in Rome and selected our ingredients for spinach ricotta ravioli, parmesan and pepper tagliolini and tiramisu. We got samples to nibble on at every station. even saw flowering zucchini and got to taste the flowers on pizza. One Day Chef has multiple kitchen stations, all beautiful and well appointed, in a large room. my husband, daughter, matteo and myself were at one of the stations. matteo demonstrated each step and we each prepared all three dishes, and then of course ate them. we prepared and cooked while relaxing with prosecco and Italian wine. It was perfect and the most memorable activity we did while in Rome. Thanks Matteo

    We loved our experience here. We really enjoyed cooking with Mateo. Making the pasta was especially fun and I now feel confident that I can make it again at home. The kitchen is beautiful and professional and it is definitely a memorable experience if you are visiting rome

He showed us why Romans make the pizza they make, how to make the sauce, and how to bake the pizza's in the oven. We tried our hand at Gelato too - genius! Such a great part of our trip!!!!     We signed up for dinner and a cooking class with Eleonora Galasso and were very disappointment and…read moreunimpressed. First of all, despite what Eleonora might have said to the food professional whose interview we read, the palazzo where she holds her classes in not in HER family. It belongs to the Piccolomini family (as in the Pope), and she is hired help. She pays a fee to the family to use the kitchen and also a percentage of whatever she makes doing her dinners and cooking classes. Although she says it is "in the family," it is NOT her family...very misleading. For dinner, we were the only ones there. She started with small goat cheeses rounds and Pulgiese taranelli....we saw the goat cheese rounds the next day at the deli on Campo de' Fiori (4 euros, and we got about half of them). An appetizer at the table was bruschetta on "fiasco," which was basically a soggy water-soaked bread. Sorry, but my bruschetta is better!! The "main" course was risotto with a bit (literally) of Italian sausage. Some cheeses, then a "charlotte" with apple and pear. Not a bad meal, but questionably worth the 75 euro price each (I think she served the online reviewer more expensive ingredients? Shrimp, pistachios?) We had also signed up for the cooking class the next day (truthfully, we signed up for her because Andrea Consoli wasn't available). We again were the only particpants. We walked around the Campo de'Fiori (where we have spent plenty of time in the past) with her, while she bought (literally) one onion, one celery, one zucchini and and an eggplant. Although my cooking partner had told her ahead of time that she didn't like eggplant, Eleonora insisted on making a pasta with eggplant, insisting that my partner would like it. My partner felt embarrassed at Eleonora's insistence so agree to try it. I wondered if Eloenora has a very limited repertroire of recipes that she knows how to make and thus her insistence on making something with eggplant. The cooking class was painful. She is NOT a cook. Gently, we tried to gradually explain to her where we were coming from...Sonoma County, amazing access to fresh organic produce, plus our own huge garden of organic produce, lots of cooking experience....thinking she might adapt her "lessons." I have worked in the food industry for a number of years, working with world-reknowned chefs. I understand cooking. The pasta she had us make by hand was so dry even she struggled to pass it through the pasta machine. The end result was boring (pasta with eggplant, quite dull and tough, and not enjoyed by my non-eggplant-loving partner). Eleonora promised to send us the recipes from the cooking class, although we have yet to receive them (nearly two months later, although I've emailed her several times). Having worked in cooking schools here in the US, we feel she should have had the recipes ready during the class. But more importantly, we felt completely ripped off. The class was very expensive (as I recall, it was about 230 euros per couple), the food items were very low cost, and as relatively experienced cooks (which we tried to share with her), we felt we learned little and would never recommend her class or dinner. She had asked us to help her establish her business in California (we live in the Wine Country)...not going to happen.
