    Forever on a mission to see whether I can request a seatbelt extender on my flight home from Spain,…read moreI have been eating many baked goods from Copena. Copena is a family-run bakery, located in "downtown" Gondomar. (Gondomar is tiny, so downtown is basically a street of shops.) My host family told me that the owners have been in the bakery business for over 150 years and have passed down their recipes for generations. If this is the case, could I please become an adopted member of this family? Even official taste-tester will suffice. The bizcochos are perfect. I have tried two different types - one with spices, nuts, and raisins and another with just olive oil. Both are all-natural, fresh, and moist without being overly sugary, cloying, or rich. I believe the olive oil makes a world of difference - the bakery does not use butter when baking these "pound cakes." Both have paired perfectly with my morning (or afternoon, or evening) coffee. The artisanal bread has also become a fixture at mealtime. It is the epitome of pan gallego - crusty exterior (making for LOTS of crumbs), with an airy, fluffy, light-as-a-cloud interior. I like the slightly avant-garde wheat variety because it has a slightly nutty flavor. The mother of my host family has a brother who lives in the United States. Whenever he is in Spain, he brings as many baked goods back to the states as possible. I'm thinking I will do the same...and if I'm going to be vacuuming my Tumi luggage for the next 5 years (pan gallego WILL do this), I need to be sure I am bringing home only the best in baked goods. Maybe, just maybe, I will share with you all...
