The concept of this place is that they have a wall where you get to choose all the ingredients you want/like, you head up and get it weighed, choose a soup base and then go sit down. At each table there is a bard code scanner where it takes you to a website where you can order extras such as skewers, drinks, sides etc. It's about $3 per 100g with 400g minimum for the soup. Rice is $2.99 extra or you can get noodles from the wall. Service was solid and friendly and the food itself was ok but that's all the good I have to say about this place. Unfortunately my visit was tainted as they took about 20 ish minutes to make our two bowls of soup. I understand they were busy but since most ingredients and the broth was pre made I don't understand why it took so long and it doesn't help when your hangry. The wall of ingredients was crammed so it's super hard to tell what's squid, what's tofu, what's beef aorta etc Overall just be ready to WAIT and deal with a tiny bit of confusion as you choose your own adventure on the ingredient wall.

The oshi sort of fell apart everytime I picked it up which was a shame because it was nicely charred and sweet from the mango. Bit of a personal peeve but I don't think sushi should fall apart when you pick it up with a chopstick. I think it should stay in tact. The Aburi Hamachi Oshi had a great char and was the standout because, honestly, blowtorched fish just wins every time. The Double Salmon Maki might look basic on paper, but it surprises me on every visit with how good it actually is. The seared butterfish in the Forbidden roll was rich and silky, and the seared scallop in The Fantasy roll was just as satisfying. No notes, just great sushi.

The dumplings seemed like they might be handmade (I'm not 100% sure), but they were pretty good overall. Unfortunately, the kalguksu noodles had a rancid smell and taste, which was really disappointing. The noodles also didn't seem handmade, so it was surprising that something as inexpensive as noodles would taste like they had gone bad. It's confusing because everything else about the restaurant -- the cleanliness and the service -- was great. But serving noodles that taste almost spoiled really ruined the experience. Because of that, I probably won't be coming back.

It was not as spicy as I had hoped it would be but the flavour profile was irresistibly good. Grilled Pork and Chicken on Broken Rice had ample portions of meat. They were tender and juicy. As I mentioned, the place gets busy and packed. We were a group of 8 and I tried to book a reservation a couple of days prior to our visit. To our disappointment, they did not accept reservations at all. The wait time was quite long since we were such a big group. This was quite hectic and stressful for the servers. Hopefully this can be considered in the future for big groups (8 people and above) to make the service smoother.
