Amazing place.
For those who aren't aware, Val-des-Sources had been called Asbestos. And yes, due to mining that resource for decades. What's cool is the town hasn't shied away from it, rather, they embrace it as a significant aspect of their roots. For example, the giant quarry left is quite the view, and they've developed a viewing area, a market, RV park and other things to come.
Moulin 7 is just in behind and very much tied to this tradition. I believe it is Moulin (mill) 7, as there had been six mills before related to the quarry. There are even items from the old mills in decorated in the shop, such as the light fixtures. They have a very large brewery on site and even one beer is called 'Asbestos'.
Aside from the historical aspect and keeping strong to it's roots, the food and beer is simply amazing. It's very much a gastropub, so you'll see familiar pub items, but done with a bit more flair. They also use (and advertise) many locally sourced food. For example, my burger was with fresh local beef, with cheese from a nearby Fromagerie, and topped with a wonderful blueberry compote. The poutine was wonderful and possibly the best gravy I've ever had with poutine. I Ioved my beer flight, sampling their various offerings and the price was very reasonable.
