I had been leaning toward the white truffle since it is more rare and there's an entire fall festival in Alba for it, but I guess I am basic because I much prefer the black (tartufo nero). We spoke in Italian, but she did speak English to some other folks, so communication should be possible for English speakers on visit. The shop carried fresh truffles in the raw, as well as every sort of value-added product under the sun. I purchased: large black truffle oil (18€), set of three truffle spreads/salsas (15€ on special), whole black truffle (small) preserved in oil (€8.5). They have bubble wrap and will prepare your items for travel, which is super helpful.

Today Enrico and his dad Gigino run this bakery keeping their family recipes alive. I had the fortune to see the behind the scene of the bakery for a few weeks and try most of their goodies. I was amazed by the quality of the ingredients they use, by the attention to the details. Every and each product is individually handcrafted with a lot of attention and love by Enrico's team. Enrico himself is a bread guru. He teaches bread making at several local colleges and uses his knowledge for bread making in his products. He searches the best flours in Italy. Visits the mills himself. He is also the president of the Pan ed Langhe. An association of bakers in Alba using Alta Langa grains to make this beautiful and healthy bread loaf. Both were excellent. With one baked and one fried we got to see how the sough held up. A very thin crisp shell with a mi e pillowy interior. The fritta had green onions cheese and guanciale while the alba was a pepper sauce puntarelle and a fresh cheese. Both excellent. I wish i had a place like this near my house.
