I do believe they have one table, so the food is almost always "to-go"'. It's perfect during Spring, where you can sit on a fountain, or in the park, and enjoy the wonderful weather and Nguyen Thanh's culinary perfection. The food here is perfect, and the owners ensure this quality with painstaking detail. The food is very fresh, light, and flavor-blasted. As with the other reviewer, I also suggest the "Magic Bo Bun". When your food is served, they take great care to make sure an even and perfect proportion of meat, vegetables, noodles, and sauce is given to each customer, and they ladle your food onto your plate with such care and love. This is perfect and must not change - it is what makes this place so special; however, I must warn you, eating here is a test of patience.* And I'm not talking about American fast-food patience - I know many French who have given up on the wait, but it is worth it. If there are 10 people waiting in line for food, you will be waiting for 20-30 minutes, so bring a book or a friend, because a little extra time shouldn't keep you from some of the best Vietnamese food in the world. *Note: The last time I ate here was in 2008, so I'm not too sure if the long wait still exists.

Last nt's visit, sure, the ingredients are different than what is available in the US so everything tasted different. This is France so I'm sure ingredients are hard time come by but, still, it was comfort cooking. This is a small mom n pop restaurant with eight tables off the main road. Easy access. Second visit, we had two dishes n each separate white rice bowls. Spicy beef with vegetables in a cumin flavored sauce n chicken vegetables in the more traditional Vietnamese mild nam pla sauce. Ok, I get where the lower rated reviews are coming from bc it's not what we're traditionally use to in flavors. But, if u had taken a whole bite of everything in the dish, u would hv found that the choice of ingredients all put together made a very tasty meal! Not too salty, not too sweet, but lots of simple umami. In other words, comfort food for weary travelers. Mind you, the chicken n the beef was over cooked but how I enjoyed it was from the overall flavors that meld together. I think every cook or chef, like an artist, has his or her own way of creating their creations. As for those low reviews, I hope u will be open to reviewing each dish by what u are tasting, not by "authenticity" as after all we are in France.

L'Apsara delivers delicious classic dishes in both traditions. My husband ordered the large portion Bo Bun and I had the chicken Pad Thai noodles. Both dishes were served with perfectly cooked noodles and quality ingredients, spiced just right. However, the highlight was our shared entree, the summer rolls (Les roulettes printemps), topped with chopped peanuts and served with a delicate sweet sour spicy vinegar dipping sauce. These three dishes along with a carafe of chilled rose totaled only 36 euros! Great, friendly service, too. Highly recommended.

I had traveled in France and Barcelona for almost two weeks by then, and I had been craving for Korean--but not an option--or any spicy Asian foods. This restaurant IS amazing! I have to say that the food that we had was better than most Asian restaurants anywhere in the US or other cities. The fresh summer roll was excellent and the wok dishes (beef and seafood) were perfect! While we were in Arles for three nights, we went back to this restaurant every single day. The staff was very kind, but if you go there for dinner, the service might be slow.
