The star of the show is the Bresse region and its surroundings, what with its celebrity volaille, escargot from Bourgogne, quenelles and sauce from Nantua (my favorite and also in the Ain department).
The copius and scrumptious snail salad is a winner in every bite. As is the poulet de Bresse, by far the richest chicken I've ever tasted. If you're curious about the specifics on what goes into the special process of raising the heralded Bresse chicken and its tricolor façade, the restaurant actually provides literature on this.
Would definitely make a return trip for the sauce aux morilles. Dessert was no slouch either.
