After my customary pastis (in this part of France, that is), I needed to ramp up my cholesterol levels (since my next physical won't be until next May - plenty of time to repent) so I started with a hearty plate of pate de foie gras canard. This came with a token side of greens - but who really cares? The part that counted was oh-so-creamy and luscious and unctuous ... yes, that cholesterol level rose alarmingly but satisfyingly. Then I followed with a main course of veal confit with mushrooms, a flavorful hunk of veal, super-tender, with a rich mushroom sauce. My cholesterol count still needed bolstering, so what better than a chocolate lava cake to top it off? This "moelleux au chocolat Valrhona caramel beurre sale" - a choco lava cake with salted butter caramel - was just what I needed with a strong cup of coffee. Oh la la - a well-earned way to end the day and the end of a hectic biz trip!
