I was wondering what delicious speck was all about since I believe it means lard in German. However, I discovered it is another Italian masterpiece of meat preservation. Speck is cured and smoked meat from the Alto Adige region in northern Italy and near Austria. To make it, you bone a pork leg, cure it in salt, laurel, and juniper, and then periodically smoke it with pine or juniper wood for months! Yes, that's right. MONTHS! It's an amazing red color with marbled traces of fat. Sliced thin to maximize flavor, it's an incredibly delicate and delicious meat rarely found in the United States.
