At home, the terrine smelled somewhat strong. It did not taste bad - but it did not taste all that good either. It was probably still good to eat from a health standpoint. But this was shellfish that was on its last legs. (I am loaning oysters and cockles legs for this review so they can be on their last legs. Shrimp already have legs, so they are okay.) Now - yes - terrines are one way of getting rid of fish that you haven't been able to sell any other way. But I would much rather have a terrine made of the good stuff. Now it could be that if I buy fish over on the good stuff side, that it would be perfectly wonderful. But I am not sure I want to make the experiment. I have bought fish from a non-trivial selection of French fishmongers. This is the first time I have ever had concerns about freshness. I am sixty nine years old.
