I've been to artisanal chocolate makers in many spots, but this one is in my top 5. Perhaps it's…read morethe nature of how they make the chocolate: no machinery, all handmade in their facility in Puyricard. Their website describes how they create the chocolate - suffice it to say that both texture, taste, and physical appearance are incredible. The lady in the shop spoke English well enough to help us choose: a few dark pieces filled with ganache, a mint, a coffee creme filling, and one with gianduja. It's going to break my heart if these aren't available in the US. The owner says online that based on production times, each piece takes about 1 minute 20 seconds to create. And then you eat one in 20 seconds, while the flavors linger for a minute. And the memory of those flavors will linger even longer!!!
