La Bicha is probably the greatest place I have ever eaten, ever. It is a small hole in the wall, but the owner limits the amount of people allowed in so when it starts becoming crowded, puts a sign FORO COMPLETO, and locks the door, so nobody comes in. A lot of people get upset about this, unless you are inside of course. They have a very limited selection of food available, but after you try his black gold, there is no such thing as thinking about ordering something else. Blood sausage made in one of the small towns around Leon, slowly grilled along with thick slices of crunchy country bread which you will soon cover with the semi solid black gold is plain and simply out of this world. For those that are from out of town, and the thought of such a food seems unappetizing, I can only tell you one thing, if you enter this bar, and listen to the orgasmic sounds people make while savoring this work of art, being as ugly as any food could be, you will try it. His house, his rules, and it is a good idea not to break those rules (not knowing them is not an excuse), because if you do, he will grill you, and make a sarcastic comment that most people that do not know him would never expect, the rest of the patrons will laugh, some more openly than others, and he will not even get a colored face. Make sure you order some of the regular items to drink, red wine, white wine, rose, beer, water, if you ask for a tinto de verano, a typical response would be "Aqui servimos el mismo tinto en verano que en invierno!" or "Señora, dejese de mariconadas y tome un vino!". As far as treating the owner, treat him with the same respect that you would like to be treated and everything would be ok, demand something and you will be getting a witty answer. Remember, his house, his rules. This is like a drivers license, it is a privilege, not a right. If you want to savor this delicacy make sure you adhere to the norms of the establishment and you are up for a treat. Break the rules and you are likely going to be one of those posting a negative comment.
