    Chicken yakisoba.
    John P.

'Kibo' was our pick for dinner the first evening of a recent July stay in Hope. Though a good while ago, it was a return visit for us (we dined there in 2017). We chose to sit at the same table as before (but the restaurant's ambiance & surroundings did look more than a little changed & unfamiliar). Our server (new to us as well) was at our table promptly, with menus, and not long after, with mugs, and a large pot of hot tea. We used the printed menu, and the wall board's listing of 'specials or featured items of the day' to decide what to order, and went with the following: -- from the regular menu: spicy agedashi tofu -- from features on the wall board: house special rolls, and chicken yakisoba, which included servings of miso soup, and an appetizer-sized, assorted tempura. Presentations looked good, but all preparations just lacked ingredients, and some flavourful "spunk & excitement". The miso soup was warm, but just flavored water. The tofu was creamy good, but what was that spicy, red sauce dripped on top? it looked and tasted like a few drops from that commercially-prepared bottle of red stuff many of us know - I washed it off in the watery, quite unflavourful sauce underneath the tofu, so that I could eat and enjoy the tofu. I counted only a few, very tiny 'slivers' of anything looking or tasting like chicken meat in the yakisoba preparation - and the preparation itself was bland. The tempura was fine - thin coatings, sweet & tender ingredients. The rolls, though I remain unsure what the ingredients really were inside them, looked and tasted fine as well. To sum up our overall dining experience at 'Kibo' -- service was fine (though quite short of being very cordial or personal), food presentations were fine, but ingredients and preparations were just 'ok'. I rate our total dining experience well-below what was experienced at this restaurant before.

This place is fantastic. It is well named (Kino means hope in Japanese). The service was amazing from the beginning to the end The place was spotless and smelled nice! The food.. Omg. The best gyōza I've had. The best edamame recipe (they add salt and warm them up which makes it really good to suck on them). I ordered the beef teriyaki, they claimed it to be grade AAA meat in the menu.. and they definitely delivered! Better than any teriyaki place I've had in any fancy restaurant in downtown Vancouver. Everything is so flavorful, even the miso soup! This is the smallest (family owned) restaurant in town and probably one of the cheapest but is definitely as good, if not much better, than all other restaurants around it.

What a great little find in the lovely town of Hope BC.

We found a new gem in the heart of Hope BC. Kibo sushi. Great homemade Japanese food, dog friendly on the patio, cold beer, and a killer banana tempura dessert. Done and done!

I got there near closing, so there was only take-out available. Just what I needed after a long day of travel. Delicious!

We arrived at the restaurant about 5 pm. - Service: what little service was actually provided by our server, from start to end, was basically non-conversant, rather 'chilly', not helpful, and totally inattentive. The dishes ordered, were brought to our table in silence, and she never once returned to ask us how anything, or everything was, and came to refill our tea cups only after being asked to do so, and only that one time. Dishes arrived from kitchen to table in a decent order and timely-sequence though - the only positive thing about the service we received. - Food: Appetizers: agedashi tofu, gyoza (10 pc) -- Tempura: yam & prawn -- Rolls: combo plate of three kinds -- Noodles: chicken yakisoba. Presentations: nothing particularly negative, or exciting. Preparations: everything rather negative, and very unexciting -- 'tofu' - small, hard pieces of "what was that?" -- 'gyoza' - edible, but whether it was the sauce used, or ingredients, it tasted very strange -- 'tempura' - very large pieces of yam, small prawns - but thin batter, and ingredients not overcooked -- 'rolls' - seemed to include poor ingredients and preparation - rolls hard, lacking flavour & taste, quite disgusting -- 'yakisoba' - hot & sizzling presentation to the table, with ingredients mostly "well-torched" (= "glued") to the hot plate!! chicken pieces were tender, but what we attempted to try of the overall dish, totally lacked anything in good, distinctive flavour and taste. Personally, I thought this meal, and total dining experience was one of the worst encountered in a good long while. Good grief, I had not expected to receive 'the' best ever sushi, just some decent service, meal, and enjoyable dining experience -- we received none of the three!! And most of the food ordered, remained on our table uneaten, when I went over to the service counter, paid the bill, with no words spoken, and left the restaurant. Soon to be forgotten, and not to be repeated.

Most American restaurants tend to give you gigantic portions, you can't fit it all in your mouth at one time which is what you're supposed to be able to do. My friends had domburi (rice bowl) or noodles and they all said the food was delicious. I can only speak about the sushi, I'll try one of their domburi dishes next time.

And it helped that it was within walking distance. Upon walking in, the staff let us pick an empty table. The place is rather typical looking for a family-run Japanese restaurant. It was clean, which is the most important thing for these quick lunch stops. - Takoyaki: OK. Good size, covered in bonito flakes. It was quite well presented and tasted fine. My only complaint was that it was close to lukewarm not hot, so it didn't seem freshly made. The greens seemed unnecessary. - Vegetable Tempura: OK. Nothing special. A good tempura batter is very light and airy, but this one was a bit bready. - Shoyu Ramen: OK. Good size, and flavors where there. The pork was the thickest piece I've ever had in a ramen bowl, but very tender, so no real complaints. - Chicken Teriyaki Rice: Not recommended. Chicken was tender enough, but I prefer chicken with skin. Plate was drowning in sauce. Edible, but not enjoyable. Service was simple and nice enough. Food came out in a reasonable amount of time. Overall, we were satisfied. The food here caters to what locals want and expect, and they generally do a fine job with it. If I was hungry and was in the area, I would certainly consider it.
