I found this really useful, as I could prepare the crockery and the correct money before the delivery driver arrived. I had a chicken curry in a fish based sauce which was light and left me with those little euphoric chilli jumps that sometimes accompany spicy food. Chatting to the proprietor, he says that they don't use onion based stock in good that's being served in the restaurant, although they do for takeaway. Chicken curries get chicken stock, beef curries get beef stock. The lack of onion apparently makes for thinner and more authentic sauces, and I'm totally convinced.
