we made reservations here as we were told the seating was quite limited & i would recommend that if you have a larger party. the atmosphere was very peaceful & i loved the calm yet tasteful music choice they played (mix of kpop & jpop)! we ordered a few appetizers, two takoyaki & one beef tataki. the takoyaki was very delicious that we had to order two (each had six per order) while the beef tataki was a bit tougher to chew compared to other places. it did take about 30 minutes for our meals to arrive, given that it was lunar new year, however, everything was so well made & scrumptious! we had ordered a hana lychee sake, which they seemed to have forgotten to put in, but it was brought out shorty after we mentioned it. overall, the food left a great umami flavor but the service was a little lacking. there weren't too many other tables while we were there but noticed many take-out orders so it's understandable. we were a party of five & the tip was included in the bill. i definitely think arriving shorty after they open in the evening is great if you want a peaceful dinner. it was a bit of a drive for us so if we're in the area next time, we wouldn't mind coming back again to try other dishes! read more

WOW. This place, although very small in size, serves up amazing food, with very fitting/cultural decor. The first thing you notice when you walk in is the elevated room in the corner meant for serving private parties, but on the floor! This reminds me so much of eating at home at a small Korean table...close and personal! Was in the mood for sushi prior to arriving, but got here and settled for the Kotdonsu (...I think?), which is a rice bowl covered with a cooked egg, pork cutlet, and cooked onions. It may not sound very intriguing for many, but I found it to be extremely delicious! I'm glad I decided to try something new rather than just stick to the status quo of my choice in Japanese restaurants... My boyfriend got the Udon, with chicken and shrimp. And with a couple sips and tastes, even his food was delicious! And paired with the veggie and shrimp appetizer, it was perfect. The service was friendly and quick, but our waitress disappeared halfway through our meal. And most people would get upset at this. However, as a former server of a family-owned business myself, I've done this and understand it completely. So I was in no way offended. The sushi at Kashin is fresh and delicious. Kashin is tucked away in a little shopping stretch by Cold Stone in Crossroads. You go through a little curtain as you step inside and the dinner hours are normally 5:30-9. There is a room on the left in traditional Japanese style where you sit on the floor. There are a few tables and then the sushi bar on the left. The decor is minimal. You pick the sushi items and then mark off what you would like. As you are seated, you will receive a nice hot towel to refresh and clean your hands. Our waiter recommended the Aburi to start and it was a seared salmon sushi bite with a creamy yellow sauce. For sushi we loved the Dragon roll, salmon roll and eel. We also had sashimi and the fish was very fresh. The prices are also very reasonable and I will come here again. It was busy on a Thursday, but we were seated fairly quickly by a friendly server. The Miso Ramen was delicious - great broth, tender pork and lots of tasty bits. Tempura was the best I've ever had - the batter is fluffy and light and the shrimp literally melts in your mouth. The Chicken Teryaki arrives on a sizzling platter with a generous amount of tasty sauce and is tender and juicy. Having lived in Japan I was excited to try a traditional Japanese restaurant that offered some dishes most Triangle Japanese places tend to leave off their menu. Beef Tataki, Agedashi, and Yakitori to name a few. Most items we tried were pretty standard but the Tempura and Udon stole the show. The Tempura was light and crispy without being greasy. The Udon noodles were cooked to perfection and had a nice bite to them. The broth was rich and deep in flavor. They also offer a well curated, reasonably priced list of plum wines and sake. We did not try any of their sushi as Osio (5.6 miles from here) has won my heart in that department. If you are looking for some Udon or Soda noodles, I highly recommend checking out this causal spot. read more

Don't come in a group of more than 4! The restaurant is VERY small. I came in on a Wednesday around 6pm and most of the tables were empty but we were told that our party of 6 would have to sit at separate 4 person tables. We were so lucky that these two very kind people offered to move so that we could have their smaller table to push next to another table to fit the 6 of us. I came to Kashin a couple times years ago before I moved away. Now that I'm back, I wanted to try some of the old places that I use to go and this was on that list. A friend and I came here for dinner one weekday evening. The decor and atmosphere is the same as I remembered it. The restaurant is intimate and quiet and the server was polite and soft-spoken. My friend ordered the Nabeyaki Udon, I got the Katsudon and we shared the Takoyaki. The food was pretty good, although my only complaint would be that my Katsudon was a bit on the drier side. There is nothing wrong with this place, but when I'm craving Japanese food, I just prefer Sushi Tsune a bit more. read more

We continued waiting and then when we asked if the food was ready yet we were told they were still making it, "the kitchen gets really backed up". With the endless amounts of sushi-focused restaurants, it's nice to see a more traditional Japanese restaurant in Cary. If I could sum up Kashin in word it would be RAMEN. Atmosphere: The outside may look plain, but the inside is like a different world. Kashin has a section for floor seating as well as waitresses dressed in kimonos. It's basically like stepping into a restaurant in Japan, except it's in the middle of busy Crossroads. The atmosphere is very relaxing, so it would be a great place to unwind during the work week. Service: The staff members are some of the friendliest people you'll ever meet. The food comes out pretty quickly despite the complex nature of the dishes. Food: It's pretty hard to find a place that serves ramen in the Triangle and Kashin has some of the best! Their sushi is pretty great too, but I always like to try stuff I can't get anywhere else ;) Here's what I've tried so far: Miso ramen - A very light and tasty ramen due to the miso based broth. The corn threw me off a bit, but it's still great. Shoyu ramen - Has a lot more substance thanks to the soy based broth. The fried egg and the seaweed are a nice touch. It's pretty much my favorite ramen and I would eat it all day if my wallet let me. Nabeyaki udon - Another favorite! Not really a ramen dish, but there's so much good stuff packed into it like udon, shrimp, and egg. Definitely filling :) Katsudon - You can't go wrong with katsudon! The pork was quite tender and the combination with the rice and onions was simple, yet tasty. Green tea cheesecake - Green tea lovers rejoice! Cheesecake lovers rejoice! Everyone rejoice! This is the cheesecake to get. It has just enough to taste the green tea, but not be too overpowering. If you're not a fan of green tea, you may not be rejoicing as much. Long story short: Pros - RAMEN, green tea cheesecake Cons - A bit pricey at times Overall - If you're looking for a Japanese restaurant that's a little more traditional, then this is the place to go. If you're looking for sushi, this is still a great place to go! A lot of their rolls are unique and delicious. My boyfriend told me not to get sushi here (because apparently it's not very fresh) so I decided to go with one of their entrees. Still, a very mediocre meal. The seafood tempura I got was the soggiest I've ever had in my life. It came out lukewarm, not all of it was properly coated, and it was heavy from all the excess oil it soaked up. There wasn't even a bite of crunchiness. So yeah, it was not cooked well at all. The miso soup and salad the entree came with was pretty tasty! However, the miso soup had a total of 3 measly pieces of tofu. The salad was very simple- just some cut up iceberg lettuce with strings of carrots. It was pretty fresh in my opinion but they definitely held back on the ginger dressing, boo. My friend got the shoyu ramen hoping for the real deal. She was not very impressed by its blandness. Atmosphere is cozy and comfortable. Overall, the food was a letdown but service was pretty good. Lunch entrees run at 10-15 bucks and dinners are around 15-25 bucks. For the noodle dishes I would say 5 stars but for the sushi, it would be 4 stars. When I am craving a noodle dish, I come here. The udon noodle dishes are delicious. There is also a choice for soba noodles and other ramen dishes, and of note, while the ramen noodles look familiar they are much tastier than the ramen packets you get at the grocery store. The sushi rolls were not worth the price for the rolled sushi (i.e. the cheaper rolls). The tuna and yellow tail rolls were only six pieces and with the rice surpassing the fish in the rice to fish ratio, these tiny morsels were not worth the ~$1 per piece calculated price. The specialty rolls seem to be the better deal. The Alaskan roll was about $10 and more the typical size I tend to be used to. The Alaskan roll was pretty darn good, so I would order from the specialty roll menu again. The restaurant gets quite busy for dinner and seating is limited. There were six tables that can seat up to 4, one large table seating 6-8, a bar area with about seven seats, and a private area that can seat a very large group and where you can experience traditional Japanese style dining with no chairs and shoes off. Another unique attribute for this establishment is that the waitress wears a kimono. I did notice that they do offer takeout but I am not sure if you can make reservations. They close for a few hours in between lunch and dinner so make sure to view their hours. read more

I really enjoyed our trip to Kashin and its hard to find if you're not looking for it, very small place. Service was super friendly and although other reviews call them out for being slow, we thought it was just fine. We got Ika sansai to start which was great and came on a bed of seaweed salad. The sushi rolls were incredible and I recommend all three of them. Spider, Kashin and Spicy Scallop which I asked for off menu. Just fair warning that the spicy tuna roll here comes as maki and its pretty damn spicy. The sushi quality was top notch and it wasn't terribly expensive. I saw alot of tables with Ramen or Udon and they all said it was great so im definitely looking forward to making this my regular sushi spot. read more

My favorite cuisine in the world is Japanese cuisine. I am always in search to find Japanese restaurants that serve authentic Japanese foods to bring me back the memories of that trip. I decided to check out Kashin in Cary, North Carolina because their menu offers my favorite dish in the world, Tonkatsu, and other Japanese goodies. :) Kashin offers a variety of Japanese food, ranging from traditional sushi to big bowls of ramen. Tonkatsu: Fried pork cutlet served typically with white rice and shredded cabbage. The panko bread exterior is crunchy like any fried food acquired at a local state fair, but light enough to remove any feeling of guilt that may overcome you. The pork is juicy and makes up for the fried exterior. A burst of umami hits you every time you take a bite of this succulent dish. The raw veggies and orange/yellow sauce was not necessary. All you need is a pair of chopsticks, a bowl of rice, some katsu sauce (comparable to Wosterschire sauce), and the pork katsu. The Unadon: Grilled eel over a bed of rice and some cucumbers to add some color to the dish. Although grilled, the eel was soft. My spoon could easily scoop out a bite size piece like a hot knife easily cutting through a stick of butter. The eel was savory and oily and mixed well with the sweet soy-based glaze that blanketed the eel. A fishy taste or any resemblance of packed sardines or other oily fish should not cross your mind when eating this dish. A balance of sweet and savory should overcome your taste buds along with the pleasure of a well-marinated fish. If I were to compare the food to what I ate in Japan, I would say it's pretty average. But for North Carolina, it's pretty good. Expand your global palate at Kashin for some Japanese food that is not sushi! read more

This is one of my favorite Japanese restaurants...because it's authentic, friendly and consistently good. It's small and quaint, and they have the tatami room (for two small or one larger group). The service is personal as well. Today, I ordered the lobster roll, the yellow jacket roll and scallop salad nigiri (see photo). As always, the food was delicious and fresh. We had a Meetup here several months ago, and we had the opportunity to see a variety of dishes. This is my go-to place for sushi in the area. I primarily order sushi/sashimi here and have been regularly impressed with the quality of the fish. They will usually have uni stocked as well. My usual order is several different kinda of nigiri sushi and a roll. I've also tried their chirashi rice bowl and tonkatsu entree dinner and have not been disappointed. Waitresses are nice and very attentive, the sushi chef is friendly and will socialize with the customers. Service is fast and the prices are reasonable. Don't come here expecting BOGO offers, though. I'd recommend this place for anyone looking for more traditional sushi, although they do have several rolls that fit what I typically see in NC sushi places. read more

A hidden gem of Crossroads since 1991, which should tell you something. Their food is authentic and their sushi is not overly disguised with sauces (like a lot in the area are).Their staff is friendly and there are loads of regulars (myself included). This a place that people generally come to by word of mouth. Speaking of which, I took Pearl M.'s recommendation and tried the Katsu-don. It blew my mind and gave me a different perspective of Japanese cuisine. If you are looking for something besides sushi at a Japanese restaurant, try one of Kashin's dishes. It's also a good place to take homesick Japanese exchange students or business colleagues. And I found very informative local information on NC businesses in Japanese (or a least when I last went) on the table to the left before you enter the restaurant through the curtain. read more

I am so happy to find this little place, hiding in a corner of Cary. We stopped for a weekday lunch, and though it is a bit pricier than the usual, the food is good enough for this not to be an issue. My husband and I got a starter of Gyoza. Not my favourite Gyoza, and completely overpriced given the portion size, but the dipping sauce was great. I got the Tempura Udon, and my husband got the Yamakake Udon (with grated yam). The tempura was crisp and yummy. The ramen was great, and made for a very nice lunch on a chilly day. The service was great. The sushi chef was happy to answer questions, and next time we will try their sushi, though I will have trouble staying away from the tempura! Their plum wines seemed very reasonably priced (unless the portion is thimble-sized) but then stay open only till 9.00 pm on most nights. read more

Kashin, not "Caution", was about a third of a mile away from Regal Stm 20. I gave it 3/5 stars because we were clearly seated before 3 other tables, but their orders were taken and received before we could get our server to our table. I'm really trying to give the server the benefit of the doubt, but in a restaurant that only has 10 tables you can't say you lost track of your tables. I do however, like the ambiance that the restaurant brings and how fast we get our food, but customer service comes first. As far as the food goes, my wife ordered the chicken teriyaki served on the hot skillet, I had the oyako-don (diced chicken with veggies and an egg all over rice) and my daughter had the katsu-don (fried chicken cutlet with veggies served over rice). Each meal was okay, good portion to the price, but super light on the seasoning. The food to me was alright, just a little too bland. I may try them again and see if that day is any different. read more
